Teachers, we’ve made it through our first week back at work. I know, you know, we all know the storm is coming…but we’ve made it through a week of in-service! Okay, so maybe I only had half a week. Still, we did it!
This weekend, CISD is having a back-to-school rally. It's so fun to see past students and how excited they are about seeing their teachers. We're talkin hugs galore. Maybe it will inspire me to maybe entertain the idea of doing some lesson-planning for school. Key word=maybe.
I'm also really excited about the 'cold front' we're getting, with temps dropping into the 90's! Small victory! My yard and water bill would really appreciate a little rain. I'll take the humidity. That's what ponytails and hats are for.
Hopefully, y'all have some fun school-is-about-to-start/cling-to-summer plans this weekend. I may make some freezer-friendly meals to prep for the chaos that is the first weeks of school. Well, friends, here's what I've been digging this week. Enjoy!
1. Duck Fat
Yeah, I said it. Duck fat. Don't be scared. You may have seen duck fat fries on fancy restaurant menus, but I’m here to tell you that you can enjoy that fancifully rich cooking fat at your house! The protein-bar company, Epic, has started producing high quality animal fats while maintaining their commitment to “nose to tail” production. Add a dollop of this to your pan-fried okra, roasted vegetables (Brussels sprouts will never be the same), hash browns, or really anything you’re baking. I recently put some into gluten-free cornbread...holy moly y'all.
While girlfriend loves a well-balanced cocktail (especially tequila-based ones), I’ve found I’m not the best at-home bartender (though I can pour a killer glass of Sauvignon Blanc). I’d love to channel my inner-Ina Gartnen, but my concoction usually ends up tasting like liquor…eck. The hubs and I have gotten in the habit of cooling off every night with an on-the-fly mocktail. The formula is simple. As the Barefoot Contessa herself would say, how easy is that?
While the boys have broken my heart already, these girls...dang! As I watch them fly through the air, my mouth literally is open the entire time. Seriously, it's embarrassing. And can we talk about their legs?! They're like glorious stallions. Too legit.
4. Soft-Boiled Eggs
Can you boil water? Congratulations! You can make soft-boiled eggs! Put eggs in water, boil water for six minutes, take eggs out of water and put in bowl of ice, peel and eat. I love eggs of every flavor and variety, but soft-boiling has been my latest way to devour em. Don’t be afraid of that cholesterol, either. Eating healthy sources of cholesterol won’t raise your cholesterol. That’s not how it works…this article goes into the dorky deets if you want to investigate.
5. Workout Jams
I’ve got some new stuff I’m jamming to, as well a college throwback. Now get movin.
