Hey hey hey! How you doin’?
I can’t believe…or maybe I can…that it’s back to school time for me! Going back to school without students is a breeze, so I don’t really mind this phase of back-to-school. Now, come another week and a half, it’s a different story. Don’t get me wrong, I LOVE the munchins, but they are exhausting. It’s nice to gradually ease back into the whole going-to-work-everyday-thing before they throw in the real curveball of being a teacher- the kiddos.
Going into my sixth year of teaching, I say bring it on, little ones, bring it on.
To all my parents out there, you probably can’t WAIT to send your little ones back to us. I get it. It’s a give and take.
Ready or not, the first day is coming.
Over the next few weeks, I’ll be featuring a round-up of healthy treats, snacks, and even lunchbox items that I’ve found at Wal-Mart for you teachers and lunchbox-packin parents out there.
1. Looka Patisserie Macarons
WHAT: Vanilla, chocolate, raspberry, and pistachio gluten-free cookies
WHERE: Freezer aisle beside frozen fruit and across from ice cream
WHY: Perfect you-made-it-through-your-first-day treat for teachers...I mean students...gluten-free, 100 calories for 2, and pre made.
2. Aidells Chicken Apple Sausage
WHAT: Smokey, slightly sweet, fully cooked chicken sausages
WHERE: Near deli meat and bacon, hiding on the top shelf at the Corsicana Wal-Mart
WHY: Gluten-free, convenient addition to pizza, spaghetti squash, sweet potato hash, or a lunchbox.
3. Clint's Texas Salsa
WHAT: Mild salsa
WHERE: Mexican aisle with other salsas
WHY: Texas-made, clean ingredients, perfect dipping buddy to carrots, jicama, celery, tortilla chips, and because people like to say salsa (Seinfeld, anyone?).
4. Boom Chicka Kettle Corn
WHAT:Pre-popped, sweet, salty popcorn
WHERE: End of chip aisle
WHY: only 4 real ingredients so no chemicals, trans fats, or soy, low calorie snack (1 cup=70 calories), and incredibly addictive. You have been warned.
5. So Delicious Coconut Milk Cookie Dough Ice Cream
WHAT: Gluten-free, dairy-free cookie dough ice cream
WHERE: Ice cream aisle with other specialty-diet ice creams
WHY: Super rich and creamy (some non-dairy ice creams are icy), I'd say the perfect treat for deserving teachers after the first week of school
