Good morning gang!
Whatcha up to this weekend? Are y'all starting Spring Break already, or do you have another few weeks? Or, my condolences ahead, are you in a phase of life where Spring Break no longer exists? Once again, I'm ever so sorry.
What am I up to? Just MORE nesting, resting, and enjoying a few more days (or week...whatever this boy wants is what he gets) of serenity before my world gets totally rocked in the best way possible.
And what am I up to in the gym? Same as last week, and the week before, and the week before that. My doctor praised me for still working out and walking, but I told her that exercise for me is as much for my physical health as it is my mental health, too. Once my little man gets here, I know I'll need to give my body some time to rest and recover and nurture my son, but I know I'll be eager to get working out again. If I don't take care of myself, I don't see how I can give my son 110%.
No matter how hectic your schedule is this week or weekend, remember you have to make time for your health. You owe it not only to yourself but to your family; you can't be your best if you aren't healthy.
Okey dokey peeps, here's what my boy and I have been doin' in the gym this week. In addition, I'm sharing what this super pregnant, paleo lady eats on an average day. These days, what I'm eating at this point in the pregnancy isn't all that different from non-pregnant Michelle. My appetite isn't tremendous, and when I do get hungry I can only eat so much. Little man is takin' up loads of my food's real estate. But, nonetheless, I'll share what I nosh on to nourish us both.
Have a fabulous weekend friends. And I'll catch y'all Monday!

WHAT I ATE IN A DAY (on a weekend since I hardly have time to eat let alone remember to take time to photograph it on work days)
8:00 a.m.- Tried a few bites of my first batch of homemade goat milk yogurt from my Bash yogurt maker...it was a little tart so I soon added some honey to mellow it out.
9:15 a.m.- While doing some lunch prep for the week ahead making my tropical salmon salad, I had to munch on the mango core...it's a huge mess but is my favorite part of eating mangoes.
9:30 a.m.- After photographing my Paleo Lactation Blueberry Muffins, I naturally had to munch on part of a muffin. Naturally...
10:30 a.m.- After having a few snacks throughout the morning, I wasn't all that hungry so I had one final large snack instead of breakfast. I sliced up an organic Pink Lady and stirred some collagen protein powder into my goat milk yogurt topped with part of a crumbly homemade lara bar. Now ready for church!
1:30 p.m.- Lunch time of roast asparagus, brussels with goat cheese, purple cabbage from Aldi, chicken sausage and two fried free-range eggs. I could seriously eat this plate every single day.
7:00 p.m.- While prepping dinner, I was feeling a little snacky so I sliced some salami, topped with fig preserves, and plopped it on top of a sweet potato tortilla chip. Makes me feel like I'm enjoying a fancy cheese course sans the wine that usually accompanies it.
7:45 p.m.- Dinner from the crockpot! Topped some spaghetti squash with my Crockpot Meatballs and paired it with my grapefruit+avocado salad that I love throughout the winter while grapefruit is SO good!
9:00 p.m.- Since everyday isn't complete until dark chocolate has made an appearance, I had a mug of Candy Cane herbal tea with my dark chocolate bark and 2 dates.
Alrighty gang, now you've seen exactly what an average day of eating looks like for your favorite paleo pregnant Texan! As always, I hope you have a FABULOUS weekend with some time squeezed into it for YOU! Be well, and I'll see ya for another Monday Motivation in a few days!
