With a new year upon us, I know most of y’all are looking ahead to this month and year hoping for a healthier, happier you.
And I’m right there with you!
While I’m not taking on a Whole 30 or trying out veganism (and never will though rock on with your bad self if that’s how you roll), I could be better about eating more whole foods and seeking more local, seasonal when possible.
With all of that said, I’m also 6.5 months pregnant….now is NOT the time to think about weight-loss, fat-loss, or anything else like that except nourishing my son so he can keep developing and growing stronger day by day.
This pregnancy, I really haven’t had a strong sweet tooth, which is unusual for me; all of my life I’ve always been on team sweet rather than savory…gravitating toward pancakes over scrambled eggs, trail mix over pretzels, brownies over nachos.
But these past 6 months, I’ve been hankering for salt- sharp aged cheeses, medium rare filet, smoked salmon. Yet there are those days when I find a happy medium, my pre-pregnancy palette finds middle ground with my current taste buds, and I embrace the beautifully expanding world of salty-sweet.
Behold, my two-minute microwavable PALEO sea salt brownie!
Sea salt and chocolate…whoever came up with that combination? Whoever you are, you deserve a ginormous bouquet of sunflowers and puppy kisses every day for the rest of your life!
I can remember first discovering this combination as a child, first with dipping my microwaved butter lover’s popcorn into my cup of Sprite on Friday nights while watching TGIF. The explorations continued as I started dipping pretzels in my chocolate Jello pudding cups, and, in a bold experiment, my French fries in my Frostie.
Ever since then, I knew sugar and salt jut belonged together.
Last weekend, I had to carb load to prep for my fasting 3 hour blood glucose test since I didn’t pass the first screening with flying colors. The prep has you carb load three days before the test and then arrive at least 10 hours fasted.
While some of y’all may think carb loading sounds like a blast of an excuse to go a little wild with the diet, it was actually a bit of a struggle for me. Since I don’t eat gluten and therefore don’t have a lot around my house, I had to get creative with my carbs…plenty of baked sweet potatoes, bananas, apples, corn chips, and sushi with white rice came across my plate. But, to really guild the lily, I decided to experiment with a single-serving paleo brownie to help with my carb consumption.
A little mashed banana (for MORE carbs), some almond flour, an egg, cocoa powder, a little almond milk, and, of course, a course salt like kosher or fleur de sel+microwave+120 seconds=heaven in a ramekin.
If you don’t have bananas on hand or feel weirded out by that idea, you could easily swap it for a tablespoon or so (depending on how sweet you like it) of maple syrup, honey, or coconut sugar.
After those painstakingly long 120 seconds, you’ve got a gooey, decadent mug of chocolaty indulgence that will actually bring some nourishment to your body instead of sending into a sugar rush.
This recipe kinda reminds me of those Betty Crocker microwavable desserts- Warm Delights- that came out about ten years ago…I’m not sure those are even still around. If they are, I’m confident I would not be eager to buy one. Loaded with soy, gluten, and preservatives, I’ll stick with my simple, 7-ingredient version, thank you very much.
If you’re eager to satisfy your salty-sweet sensations, look no further! Top it with a dollop of almond butter, a handful of berries, or plop of coconut whipped cream. If you’re like me, you’re welcome to add an additional pinch of salt on top of all of that!
