G-day mate! Let’s put another shrimp on the barbie!
Growing up with two older brothers, I was raised on the comedy of Jim Carry, Jeff Daniels, and Chris Farley. Dumb and Dumber is one of my all-time favorite comedies. It’s just so stupid, yet I love it.
Whenever I think about grilled shrimp, that’s exactly where my mind goes. Quality stuff…I know…
This summer, I’ve really been on a grilled pineapple kick. Putting in on burgers, in guacamole, or in slaw, it’s such a refreshing addition to nearly any meal.
Today, I’m putting it in a salad with grilled shrimp, angel hair cabbage, and boatloads of cilantro.
The combination of these flavors on one plate is almost too much…almost.
You go in for a perfect bite - the crunchy, tangy slaw, the sweet and smoky pineapple, and the tender grilled shrimp – and suddenly you’re in Key West, the Bahamas, Cabo, or anywhere BUT Texas in August.
I love how quickly this salad comes together, too. Shrimp and pineapple take less than 5 minutes a side to grill, so you could easily tackle them at the same time. I didn’t want to sweat my face off outside, so I just used my grill pan.
Also, between teaching munchkins all day and teaching Zumba at night, I love having meals that I can do some prep work ahead of time and then quickly assemble come dinnertime. The slaw could be made a day or two ahead of time; if anything, it will get more flavorful if you do!
Another great part of this recipe is that I used frozen shrimp for it! I picked up some GORGEOUS frozen red shrimp from Trader Joe’s, but you could use any frozen shrimp from Walmart or your local grocery store. Just be sure you give it plenty of time to thaw on its own.
When buying frozen shrimp, I opt for wild-caught over farm-raised, and American-caught/raised over Thailand or the Philippines. Murica!
Don’t like shrimp? Sub in chicken, skirt steak, or even pork tenderloin (pork+pineapple=perfection).
Alright y’all, I’m going to go scarf down this salad and pretend I’m back in Costa Rica or at least South Carolina. I’m really not too picky when it comes to the beach.

What’s on your favorite summer salad? Watermelon? Tomatoes? Mango? I love watermelon+beet+goat cheese/feta cheese/blue cheese (I know…for being Paleo I sure do like cheese…it's that 15 of the 85/15 mindset.
