Long time no chat, huh? Or so it feels.
I haven’t gone off the radar with y’all, rather I’ve allowed myself a little time off, too.
Ever since arriving here in Tennessee on Christmas Eve, it’s been nice to take a break from recipe creating, post writing, and photography for a few days.
However, we’ve got another foodie holiday tiptoeing our way, and I wanna give y’all a few festive recipes that could make the New Year all the brighter.
And this first one today would be a rockin app for your New Year’s Eve partray or snack to savor while watching the boocoos of bowl games on your couch.
Let me just paint this picture for y’all: tender shrimp, snuggled in a crispy, salty blanket of bacon, brushed with a little sweet and spicy glaze.
4 ingredients. Under 30 minutes.
Oh, and this gem is 100% gluten-free and paleo.
Who says eating healthy has to be boring?
If I had to summarize New Year’s Eve, here’s what comes to mind:
While the second to last one may be a bit cenacle, it’s true.
Throughout my entire teenage years, I felt like New Year’s Eve had to be something spectacular and memorable and elegant.
Fast forward a decade or so and I now want these few things on New Year’s Eve:
And this recipe is one that certainly fits with my idea of New Year’s Eve, past and present.
It’s crazy simple. And additive. And fairly healthy. And totally paleo.
How easy peasy paleo is this?
Not that there’s anything wrong with devouring large quantities of bacon shrimp by yourself…I hear plenty of cool kids do it…
If you’re hesitant about wrapping otherwise healthy shrimp in bacon, might it remind you that because you prebake the bacon, a lot of the fat drips off in step 1, leaving a crispy, salty, not-so-fatty blankie to swaddle that shrimp in.
I still don’t have you persuaded, you could always swap the bacon for prosciutto or other thinly sliced ham.
But come on. We all know life is better with bacon.
And shrimp. And maple syrup. And pepper jelly.
