For many of y’all, you are enjoying your last few days of Spring Break 2017! Woohoo!
Yet for another sizable portion of y’all, you haven’t seen the likes of a spring break for years, and for that I am truly sorry. Yes, it's the perks of being a teacher. But trust me people, teachers have EARNED the week off. Leave them alone and let them rest. They deserve it.
Whether you fit into the first or second group, we all appreciate and deserve a good cocktail, or mocktail, now and again.
As a result of A- being my Spring Break B- being 40+ weeks pregnant and C- being stuck at home with a little more free time than normal, I’ve whipped up a healthier mocktail in honor of one of my favorite cocktails, the mojito!
It wouldn’t be Spring Break without an indulgent cocktail or seven…but too often most cocktails leave us (okay, at least ME) feeling like the garbage that’s inside them…loads of sugary syrups, cheap liquor, and junk-filled mixers=recipe for a grade-A hangover.
But today my friends, I’ve concocted a mocktail (that could easily be turned into a cocktail with a splish splash of rum or processo or both…yummo) that is clean, easy, and actually nutritious. Healthy alcoholic beverages?! Now that’s my kind of Spring Break.
No passport is required to enjoy my healthier Strawberry-Kiwi Fauxjitos. Crank up the blender, turn up the Jimmy Buffet, and let’s get sippin’!
As someone who has participated in her fare share of boozy Spring Breaks, this year has been a whole new ball game for me. While my days of overconsumption and alcohol from plastic bottles and typical ‘Spring Breaking’ shenanigans over, girlfriend here can still appreciate a well-crafted, out-of-the-box cocktail.
Alas, over the past 9 months, I haven’t participated in Happy Hours and boozy brunches or ½ priced wine nights. Do I miss it? Honestly, yes, yes I do. Is it a worthwhile trade to bring a healthy child into the world? Of course, of course, of course. But mama is looking forward to her first margarita or glass of bubbly or mojito.
Oh Mr. Mojito…you crisp, refreshing, delightful beverage.
A muddling of mint, squeeze of lime, splash of simple syrup and soda, and, of course, a dollop of rum…golly we’re just a nonstop flight away from a paradise of mini umbrellas, infinity pools, and lack of responsibilities. Sign me up.
Seeing as I’m going to be heading to a hospital to deliver a child into this world ANY SECOND NOW, I’m rather removed from the world of swim-up bars and artistically-folded towels.
Since my Spring Break has me on McNugget Watch 2017, I’ve decided to create my own little cocktail lounge, scratch that mocktail lounge, right in my very kitchen!
Blender+frozen fruit+fresh juice+sparkling probiotic water=MOCKTAIL TIME!
It’s seriously that easy. I had a hankering for Strawberry-Kiwi, but you could easily adapt this to whatever fruity flavors strike your fancy (or whatever frozen fruit you already have that is growing a bit too much freezer burn).
Don’t like Strawberry-Kiwi? Mango would be magical. Blackberry would work beautifully. Pineapple would be perfectly palette-pleasing (oh dear, I’ve been away from my eight year-olds too long).
Seeing as it’s five o’clock somewhere, feel free to add your own festive additions to kick it up a notch. Even though I’m enjoying mine on the virgin side these days, you have my blessing and approval to add your own little special sauce.
