Yup, I know.
Cause if you’re gonna indulge in some cookies this time of year, I’d rather you do it with my recipes…
But for reals, y’all, these cookies are SOOOOOO good.
Yup, I kept with Tuesday’s mashup theme and present y’all the love child of the peanut butter cookie and gingerbread cookie: a spiced peanut butter cookie!
These gems are super simple, super flavorful, gluten-free AND dairy-free and paleo. Plus they're the PERFECT balance of sweet, spice, and a hint of savory.

I’m a HARD CORE peanut butter fan.
Crunchy or smooth, salted or not, with ribbons of honey or chunks of coconut or swirled with cinnamon, I love peanut butter. Or really any nut butter. Or coconut butter. Or just butter.
But Christmastime doesn’t really scream peanut butter to most people.
I, however, am not most people.
Thus, after concocting making my gingerbread cookie dough truffles last week (which features cashew butter+gingerbread spices), it got me thinkin…
What if I made a paleo gingerbread cookie with peanut butter in it?!?!
Cause while I love love love 1- peanut butter cookies and 2- gingerbread cookies, I had a sneaking suspicioun it just might work.
And y’all, confessions, I’m not sure if I can ever enjoy those two separately again!
I’m pretty sure y’all will agree with me once ya try these, too!
With a little healthy fat from the eggs and nut butters, natural sweetness from the molasses and coconut sugar, and the fluffiness (and fiber) from coconut flour, these cookies wouldn’t be the worst thing to nibble on while opening presents on Christmas morning.
Heck, they’re healthier than a cinnamon roll (though 0% knockin cinnamon rolls if that’s your family’s tradish).
But maybe you’re looking for a new tradtion or a little something you can bake up to take to those people who appreciate a little TLC, like teachers or daycare workers, school secretaries (who make the WORLD go round) or group exercise instructors like me!
Like I said Tuesday, a little healthy, homemade, love-filled baked good+a thoughtful note can make a huge difference in someone’s day or week or even Christmas season.
