I’ve now been living as a Texan for nearly four years. I am accustomed to the flatness, the stickiness, and the bigger-is-better mentality, but I don’t know if I will ever come to terms with the barbeque here. Yeah, I said it, y’all.
I can remember the first time I had Texas bbq. My parents and I drove the 12 hours from Tennessee to Dallas to move my sturf, leave my car, and attend an engagement party (all in about 72 hours) just a few weeks before my wedding. Will went out to pick-up bbq for dinner after an arduous day of lugging boxes and furniture in 100 degree temps. He opened up the contents of a large brown bag and pulled out something mysterious, unknown, and a bit frightening. We often fear what we don’t understand, right? Beef brisket, sausage, white bread. Escu me?
Needless to say, I’ve still not come around to it…I will always be Team Pulled Pork, sticky-sweet sauce, and vinegary slaw.
Sooooo can we just cut straight to BBQ, y’all? When I say bbq, you’d better know by now what I’m talkin’ about. To put a summery spin on my go-to bbq, I tossed in some local Texas peaches into the party. If you haven’t tried peaches with pork, please promise me you will before those beauties are no longer in season (you’ve got about a month left…what are you waiting for?!).
And what all-star can function without its backup dancers? That would be your tangy, crispy Pineapple Jicama Slaw. The contrast of the smoky, rich pork with the crispy, tart slaw is just…well…
To appease my die-hard Texan husband, I do serve French fries with this meal, though I make sweet potato fries for myself (I’ll give you that recipe sooner or later…one thing at a time folks). I do add scattering of pickles to my plate, too. That’s one Texas bbq tradition I can and do support.
Now go do yourself a favor. Go on down to your local butcher (you know, that guy who has an entire store just for meat!) for some pork, snag some peaches from your nearby farm stand, and dust off your crockpot. In about 5 minutes of prep work, you’ve got some authentic East Tennessee bbq right at your fingertips. You are welcome.
