Happy February, friends!
And you know what that means!
Valentine’s Day is creeping around the corner…ladies, it’s time to start “accidentally” leaving that Kendra Scott necklace or Tory Burch clutch website up on your laptop…
And gentlemen, it’s time to start making those dinner reservations, ordering those flowers, and other thoughtful signs of affection.
While that big box of Godivas may seem like just what a lady wants on Valentine’s Day, it is what it is: a big box of unnecessary sugar.
So instead of pumping your sweetie with processed sugars and oils and chemicals, why not make something from the heart that’s actually good for your heart?!
I’d say my Paleo+Whole 30+Keto Chocolate Chili would do just the trick!
Chocolate and chili?
Don’t worry…it’s NOT like someone has dropped a handful of Hershey’s kisses into a meaty, hearty bowl of chili…just a sprinkling of organic cacao powder lends a rich, deep layer of complexity that you never knew your chili was missing.
I served it to three long, tall, Tex-Mex-lovin, Waffle House-devouring men and they had NO idea chocolate was simmering alongside their beef and tomatoes.
So let’s crank up the Michael Buble, bust out the grassfed beef AND cacao powder, cause it’s about to get romantic up in here.
Some things in life just go together…peanut butter and jelly, grilled cheese and tomato soup, chocolate and chili…
Okay, so maybe that last one is a stretch for some of y’all, but once y’all give it a try you’ll agree with me.
And it’s not like I’m some mad culinary scientist who concocted this combo…chocolate+chili has been goin down in Mexican culture for HUNDREDS of years.
I’m not that brilliant.
But I did think to spice up my basic chili recipe with a handful of smoky spices and nutrient-loaded cacao powder, so I’m just slightly brilliant.
What’s so great about cacoa powder (note: cacao is NOT the same as cocoa).
Well, so glad you asked…
Golly wolly, from boosting eye health to combating depression, it’s no wonder this bean was once a form of currency!

And you can be brilliant, too, by whipping up a batch of this chili for your family and friends this weekend for the Super Bowl or in a few weeks for Valentine’s Day!
How easy peasy paleo is this?!?!
And this is one of those recipes I try to make the day before I want to actually serve it since it gets even more rich and flavorful the longer it sits.
Could you make it this weekend, freeze it, and pull it on for Valentine’s Day? HECK YES!
Like most chilis, this one freezes like a dream, but it also will last in your fridge for nearly a week, too!
So go ahead and make this puppy tomorrow, throw it on the stove Sunday before kickoff, and set up a buffet of toppings, letting your guests just serve themselves. That’s what I always do and it’s a HIT!
