This time of year, late winter, holds one of the greatest competitions on the face of the Earth.
I’m not talkin’ about the Super Bowl. No Winter Olympics. Nope, not March Madness even.
I’m talking about Girl Scout Cookie season.
As a former Girl Scout, I know the fierce rivarlry that goes on amongst these young girls. The hours spent outside Wal-Mart, the sweat trudging through neighborhoods with Red Flyer wagons stuffed with boxes, and the horror of finding out the one girl in the troop’s dad works for a HUGE office where she sells hundreds in minutes.
It gets real. But, that’s how the best life lessons are learned, right?
While my days of pushing the cookies are LONG over, I have been continuously supporting the Girl Scouts and their mission for years. Nowadays, I purchase the cookies though I don’t eat them (Mister HHT is a cookie monster).
Out of all of the flavors, I think we could all agree there is a Top 3 (and if you don’t agree with these Top 3 flavors we need to chat in private later about your priorities in life) and they include (in no particular order): Thin Mints, Tagalongs, Samoas.
While all three are wonderfully delightful in their own way, I just can’t bring myself to eating a box of gluten, sugar, and soy. Darn my nutritional conscience!
But have no fear! I have found a way to embrace the Girl Scout cookie spirit in a healthier, more nutritious yet still delicious way. Gang, let’s give a warm welcome to my new bestie, Samoa Granola!
Growing up as a Girl Scout, I had bittersweet (pun intended) feelings about cookie season. I enjoyed the pride from receiving the meager prizes and badges I earned for the minimal level of boxes I sold, but honestly I adored gobbling up Thin Mints and Tagalongs by the half dozen (though I do remember once going over to my grandparents’ house to deliver their cookies…they said they wanted to crank into a box right then and I ended up eating almost the whole box while hanging out with them…grandparents are the best).
Somewhere in high school, I decided to branch out and try the Samoa cookies my dad seemed to hoard for himself. Life=changed.
Not only were Samoas my gateway into coconut treats (the texture had always been off-putting to me), an instant bond was formed as those cookies became my new favorite (sorry Tagalongs, nothing personal).
Fast forward ten years to my pregnant and paleo life now…would I still love a Samoa cookie? Maybe, though I’ve found when I try many of those nostalgic treats now they don’t seem to taste as awesome as I remember them being. Does that ever happen to y’all?
Anyways, since I don’t want to tarnish my nostalgic memories of Samoa cookies, I’ve decided to take that irresistible trio of flavors- chocolate, coconut, caramel- and infuse them into a granola that won’t spike my insulin or leave me feeling ashamed of a choice I fed to my growing son.
Not a samoa cookie fan? You can still enjoy this granola with a few modifications. Just leave out the coconut and replace it with another nut or dried fruit to toss in at the end.

I’ve been tossing it on top of my protein pancakes, baked sweet potatoes, and smoothie bowls. Have my paws been digging straight into the fridge grabbing it by the handful? You betcha! In fact, I think it’s time for another handful before I head out the door.
