Baby, it’s cold outside!
For the past few weeks, it has been very, very, very cold.
And I’ve loved, loved, loved it!
The kind of weather that makes my face kinda numb when walking outside for over 20 minutes.
The kind of weather that you need to layer a shirt and a vest and a sweatshirt and a jacket on for.
The kind of weather where you want to sit by a fire and drink peppermint mochas and snuggle with basset hounds and/or babies all day.
And when this kind of weather sets in, I want some comfort food.
While lasagna and chili are absolutely wonderful, I’ve got a comfort food dish today that is hearty enough to stick to your ribs on these cold, blustery days yet it’s elegant enough to serve to guests or even to your special someone in a few weeks for Valentine’s Day.
On top of all that, this one is SUPER easy.
And it’s healthy!
Cause while I’m no math teacher, I’m pretty sure lamb+red wine+figs=fancy
Whenever I serve lamb, I can’t help but think about one of my favorite movie scenes EVER, y’all know the one I’m talkin bout…
I gotta give it to Aunt Voula…I sure do love some lamb.
Whether it’s ground up in meatballs or grilled chops, that rich, slightly sweet red meat is my jam.
Lamb is my jam.
And with a recipe as simple yet sophisticated and healthy as this one, it can be yours, too!

Serve with my slow cooker mashed cauliflower, simple mashed butternut squash, roasted sweet potatoes, or whatever you dig!
And just look at that plating! It makes for a gorgeous and impressive dish to serve to guests or your special someone.
They’ll never know it took you only minutes of actual prep to complete!

But I love using the shoulder chops since it’s an inexpensive cut that’s super flavorful and loaded with collagen!
Collagen=healthy skin, hair, hearts, joints, and so much more!
So forget the botox for today and just have this lamb instead!
