First and foremost, before we get to the goods, I want to stop and wish everyone a Fantastic Fourth of July! Freedom is a daily luxury I am able to mindlessly enjoy every single day. I don’t stop and reflect on this enough; what a blessing it is to live in a country where I can so openly share my life, my thoughts, and my faith with you wonderful people. Now let’s get back to business. Pancakes.
There are some days and a girl just needs some pancakes. And when I say some days, I mean almost every day. Pancakes, you glorious treasures, you. Stacked, studded with blueberries and chocolate chips, slathered with almond butter. Eaten with a fork or with your hands. Breakfast, brunch, lunch, dinner, dessert. You are always an appropriate meal choice.
I have always and will always be on team pancake. Even as a child, when it was Friday morning and mom was willing to up her short-order cooking for us before we headed to our final day of school for the week, I almost always request pancakes.
Waffles, with your crisp caverns ready to capture syrup at a moment’s notice, just don’t do it for me. French toast, don’t make me laugh. I’ve never understood you; you’re French, after all. But the pancake, now that is something I can stand behind.
Before you go reaching for the boxed mix that has been sitting on your shelf since last Christmas, I urge you to stop and rethink your pancake situation. Pancakes, inherently, are not the healthiest of choices (processed, refined flour and sugar) BUT I’m here to show you how you can have you (pan)cakes and eat them, too. Cue the protein pancake.
In a matter of minutes, you can whip up pancakes that are light, fluffy, and packed with the nutrients your body requires and the flavor your taste buds demand. Minimal cooking skills are required. With enough patience, you could probably train your small children, Labradors, and even husbands (ok, that is just my wishful thinking) to make these for you!
