In case you’ve missed out on my life for the past 9 months, this Healthy Happy Texan has extended her title to Healthy Happy Texan Mommy.
As I anticipated, being a mommy is awesome.
Sure, these first few weeks I’m kinda tied down to my little dude seeing as I’m his #1 source of sustenance and all.
Sure, he dictates my free time, sleep time, laundry time, and all types of time that fit within my 24 hour day.
Sure, he is still a bit unpredictable with his daytime naps, like a tiny ticking time bomb of cuteness.
And since time is a bit more limited, I need boatloads of healthy, easy to scarf down meals and snacks at my fingertips.
While motherhood is exhausting stuff, I know I MUST keep myself healthy in order to give it my all. That means staying hydrated, managing stress, resting (as much as possible with a newborn), and keeping my body, really our bodies, fueled with the right types of carbs, fat, and protein. As a double whammy, I'm a new nursing mom, so all of those listed above are CRITICAL for a solid supply. No milk=one unhappy little dude.
Today’s snack, my pistachio lime snack bites, are inspired by one of my favorite packaged (GASP! Yes, I buy packaged snacks sometimes)- Lara Bars. I love how clean and tasty these little nom noms are, but I was confident I could save a few pennies by making them myself.
These bites of flavorful goodness are becoming my go-to late afternoon, "shove in my mouth because he’s about to wake up from a nap and needs to feed again" snack.
Whether you’re a busy mom or working 12-hour days or just appreciate a delicious, nutritious snack (hazaah for rhyming), these little nuggets of scrumptious citrus flavor will have you looking forward to snack time all day!
One challenge most new moms face is making sure they still take care of themselves.
Between the physical burdens like the sleeplessness, postpartum recovery, discomforts of nursing to the emotional strains like losing your free time, sense of isolation, and exhaustion, I’m finding it CRUCIAL to make sure this momma stays healthy and happy, making time for myself every single day.
An easy way to treat myself daily is to fuel my nursing, recovering body with snacks! When your day is elbows-deep in stinky diapers, spit up, and laundry, the little things in life, like yummy snacks, can make a big difference!
Not only do my snacks need to be yummy, they MUST be the kind of thing I can shove into my mouth one handed as I football cradle my newborn whilst picking up the swaddle blanket that fell on the floor with my feet (seriously, I’m getting really stellar at this skill) and logging my son’s diapers and sleep and feedings into my phone…woof, y’all. I’m taking multi-tasking to a whole new level.
Lastly, these little fellows are loaded with whole food nutrition. Pistachios, almonds, dried berries, dates, coconut, and lime…no added sugar, no added flours, AND no cooking required. Just throw everybody in the food processor or Vitamix, whirl it up for a minute or so, and mush into bites whatever size you desire.
Yes, these are called a snack bite, but I like to make mine more like snack two-bites, because two bites are always more fun than one, in my humble opinion.
So, to recap, these little snack bites are:
1) delicious, loaded with a bright burst of lime flavor, richness from the nuts and coconut, and slightly sweet from the dates and berries.
2) stupidly easy, coming together in UNDER 5 minutes
3) portable, just throw in a baggie and toss it into your purse, diaper bag, or gym bag and off you go
4) healthy, with no added sugar and dense, fully-loaded source of protein, fat, fiber, minerals and vitamins
Before I let y’all go, I want to emphasize how versatile these snackies are…
Don’t have pistachios? Substitute walnuts or cashews or pumpkin seeds or whatever nuts you have in your pantry that you need to use up.
Don’t like coconut? Leave it out! Just sub in 1/2 cup of another type of dried fruit. Apricots, pineapple, or more dates would be delish.
No limes on hand? Use lemons or just omit it!
Okey dokey artichokies, Healthy Happy Texan Mommy out for today…there’s a pile of baby laundry covered with various bodily fluids (nough said, huh?) AND a gorgeous, sunny day outside with my name all over it.
You keep rockin’ you. Remember healthy does not have to be complicated. Make a few simple, healthier choices every day…go for the water over soda at lunch, take a walk after work instead of plowing through three more Friends episodes (do that AFTER your walk!), hop off Facebook and hit the hay 30 minutes earlier…
Make a few of these steps toward health and you will see it pay off in no time.
