If you like piña coladas….getting caught in the rain…
Why yes, Rupert Holmes, I do love a frosty piña colada.
Unfortunately, they aren’t the healthiest beverage out there…in fact, the average piña colada (which is around 9 oz.) has nearly 500 calories and a whopping 63 g of sugar. Y’all, that’s more sugar than a Cinnabon or 3 Frosted S’Mores Pop-tarts.
While the idea of sipping a piña colada on the beach this summer sounds tantalizing, I’m not crazy about how all of those empty calories and sugar will make me feel, not to mention make my squishpack look a few hours later...the idea is that it gets less squishy with time, not more so.
It’s too bad, though, cause that combination of creamy coconut and bright pineapple sure floats my boat…
I’ve found a way to satisfy my craving for the flavors of that calorie-loaded cocktail in a MUCH healthier way- my homemade protein bars.
Gluten-free, Paleoish (depending on the protein powder you use), and loaded with coconut-pineapple deliciousness.
No sugar rush. No gnarly hangover. No belly bloat.
Just good, clean piña colada satisfaction that the whole family can enjoy!
As a fitness-loving foodie, I’m always contemplating new, delicious ways to get more protein throughout my day, especially nowadays since I’m nursing every threeish hours.
Between 5-6 daily nursing sessions, a few miles of stroller walking, and a 20ish minute workout, this lil mama needs to be extra thoughtful and intentional with her calories, knowing everything I put into my body gets passed along to my son.
Alcoholic beverages, such as the beloved piña colada, just aren’t in the cards these days. Now let’s be real, a few ounces of my favorite rosé or pinot noir do happen a few times a week, but I’m not hitting the hard stuff. Though trust me, I have been tempted…especially during last week's growth spurt. WOOF!
With all of this said, I’ve concocted a new way to enjoy the summery flavors of that rum-laden cocktail without doing any harm to my son or my personal body composition goals.
These protein bars are sooooo easy and require zero cooking or cooking skills.
Just pour your ingredients into a bowl, mixey mixey, press into a bread pan and chill. Cut into whatever shape you like and get your snack on. Squares sounded fun to me.
To bring the piña to the party, I threw in some chopped dried pineapple. When you’re shopping for it, PLEASE pay attention to your label. Dried pineapple is already really sweet, and a lot of fools ADD SUGAR to it. Come on, now! We don't need that. Buy the unsweetened kind (I find it at Wal-Mart in the produce section).
Now for the colada, I use a coconut quartet: flour, shredded, water, and butter.
And to add some texture and because I’m an overachiever, a drizzled melted white chocolate and macadamia nuts on top of mine…you could easily omit this step but it makes them look just so darn pretty. The choice is yours.
A quick note about coconut butter. If you live in a smaller city like me, this stuff will NOT be in your grocery stores…at least not yet! Sure, you could buy a 16 oz. jar of it on Amazon or at a specialty grocery store for $12+ or you could make it yourself for half the price. Enough of this talkin’, y’all. I gotta get my hands on one of those bars.
And if you wanted to enjoy your with a little rum+coconut water+pineapple juice, I wouldn’t judge you in the least bit. Even if it is 8 a.m.
