No time for chit chat when we have something as magnanimous as this to discuss….
We’re talkin brownies today.
Hands down my favorite dessert on the planet, I have spend many years experimenting and retrying and finagling in the kitchen to create a fudgy, rich, decadent, you-sure-this-is-Paleo brownie recipe.
I’ve tried avocados.
I’ve tried almond flour.
I’ve tried sweet potatoes.
I’ve tried coconut flour.
I’ve even tried black beans…let’s not go there again, okay? Can we just agree that beans and brownies shouldn’t be included in the same mixing bowl?
Who knew that zucchini is where it's at?
So flavorless. So watery. So unassumingly uninteresting.
Yup, that is the secret to THE BEST PALEO BROWNIES EVER!
Bold statement, I know.
But the proof is in the brownies, my little dumplings.
Let’s get to it. We’ve already wasted too much time.
Over the past year, I’ve taken the humble little zucchini and pushed it to its limits. Growing up, zucchini was either served grilled or sautéed amongst a heap of other veggies like squash, peppers, mushrooms, and onions.
It’s not the most glamorous, sexy, or trendy vegetable out there.
But boy oh boy, it sure has a lot to offer.
Some of my Paleo favorites that highlight the versatility of this little fella include:
This little squash is so much more than meets the eye.
It’s like the Frodo Baggins of the vegetable world.
Everyone underestimates it, but it is capable of such greatness, world-changing greatness at that.
Yup, this unsexy squash can be grated up as part of the most delectable, moist (sorry to those who I just made cringe…I won’t use the word again today. Pinky promise), fudgilicous brownies EVER!
No flour. No butter. No refined sugar.
Just a handful of ingredients you probably already have in you pantry are all it takes. That and less than an hour.
Paleo brownies that take less time than an episode of Game of Thrones and cost about $6 to bake? If we went to Whole Foods or a local gluten-free bakery and ordered 9 Paleo brownies, it would cost us nearly $30! Just make your own and use that extra cash to buy yourself somethin’ real nice- like some crunchy almond butter or a new workout tank top.

Even if no one else in your family is open to brownies with veggies hidden inside, no worries! These little beauties freeze splendidly. I cut my batch into individual portions, freeze 7 of the 9 by wrapping them in aluminum foil and slipping them in a ziplock, and keep the other 2 in the fridge for 5ish days.
Warmed and topped with cashew or coconut milk ice cream and perhaps a plop of coconut butter, this is a magical treat that brings goodness to your body and your muscles.
