I’ve always been a fan of baking.
Boxed brownies with my mom turned into homemade cheesecakes in high school transformed to scratch made red velvet cake in college to my present pastry world of almond flour and coconut sugar and cashew butter. I still love baking to this day, but, with a three month old, I don’t always have time for the sifting and measuring and tempering.
With summer officially here in Texas, it’s zucchini season. They grow like wildfire here, so they are super cheap at the Farmer’s markets. And when life gives you zucchinis, you have two choices- 1) make zoodles 2) make zucchini bread.
I’ve already made #1 this summer, though I haven’t gotten around to making zucchini bread yet. Don’t get me wrong, I already have a solid, Paleo-friendly recipe that I shared with y’all last summer…remember that whole time/effort problem I have these days?
Any who, ever since our lil nugget was born, I’ve been finding ways to satisfy my cravings for baked goods without having to actually bake them. My carrot cake overnight oats and carrot cake granola were born out of that necessity; mama wants Paleo baked goods but doesn’t have the time to make them herself.
And no, I don’t have a Whole Foods or Sprouts or Trader Joe’s or Central Market I can easily zip off to in order to buy my own gluten-free or Paleo goodies.
So today, friends, if you’ve been dying for a slice or two of zucchini bread but don’t want to go to the trouble of making it yourself, I’ve got a recipe for you!
It takes about 3 minutes to make, has ZERO added sugar, allows you to get a serving of fruit and two vegetables, and is 100% paleo (okay, depends on your protein powder, but you get my drift)!
No oven required! HAZAAH!
If you live in Texas or other warm climates, you have already been rocked by some record-breaking temperatures this summer. While I thank God every single day for air conditioning, it seems my house can still get a little warm. Heaven forbid I turn on the oven; sweating while cooking is not an activity I enjoy. Actually, I don't like sweating in general unless I'm exercising. I live in the wrong state...
So when this little lady wants her some zucchini bread, I’m left with the difficult decision: go through the effort and time and sweat to bake a loaf OR go throughout the day without zucchini bread.
What a choice, indeed.
That was a challenge I faced, y’all, until this recipe idea popped into my head!
ZUCCHINI BREAD SMOOTHIE!
What goes into zucchini bread?
Zucchini, a little banana, cinnamon, vanilla, maybe something to give it some texture like chocolate chips, walnuts, or coconut…Well, y’all, that’s pretty much the line up for this smoothie!
Before I toss you straight into the recipe, I want to point out a few tidbits I discovered while testing this sensational smoothie out for myself. If you follow me on Instagram or Facebook, you've seen a few of these experiments take shape.
4. For flavor and added texture, I tossed in a tiny bit of frozen banana and 2 dates. If your protein powder is sweetened already or you are really trying to watch your sugar, just leave these out.
When it’s time to make this smoothie, I urge you to play around with your toppings. In case y’all haven’t learned this about me yet, I’m ALL about contrasting textures in my meals. If I’m eating something creamy or mushy, I usually want something crunchy topping it…
Fresh berries, banana slices or chips, granola, chopped walnuts, coconut whipped cream or dried chips, shaved chocolate…the possibilities for what you could top this with are ENDLESS!
While you are more than welcome to serve this in a clear glass that would allow for a presentation worthy of Food Network magazine, 99% of the time I devour my smoothie from a bowl with a spoon…makes it easier to scoop up all them toppins’.
