Let’s just think about this for a second…pumpkin+pie+shake= HOW WOULD YOU NOT HAVE A GREAT DAY BASED ON EATING THAT?!
I’m deciding to share this recipe I’ve been working on for a week or so today, on a Tuesday. In my opinion, Tuesday is the worst day of the week. It’s like a Monday, just in disguise. You’re still far from the weekend, and the refreshment of the weekend has certainly worn off. You expect Mondays to be rough, but Tuesdays can sneak up on us in a manner I really do not appreciate or enjoy.
To help y’all overcome the drudgery and blahenss that can be a Tuesday, I’ve decided to share a recipe that is surely going to bring joy, delight, and a pinch of autumn magic, yes magic, to your day.
Friends, I give you my pumpkin pie shake.
If you’re already sick of my pumpkinpalooza that is fall, you can go ahead and stop reading for today and tune back in tomorrow. BUT, if you’re like the 96% of people out there who are on Team Pumpkin Spice and Everything Nice, let’s continue our journey, shall we?
It came to me a few weeks ago when watching Food Network as I typically do on my weekend mornings, hanging out with my besties Ree, Trisha, and Nancy, and slurping down one of my normal smoothie bowls. Maybe it was the crispness in the air or the sight of my adorable kitchen tablescape my mom designed for me a few weeks ago…
Why haven’t I put pumpkin into my smoothie bowl? I call myself a pumpkin aficionado and hadn’t put it into a shake. How diabolical.
I knew I wanted to keep it clean, simple, slightly sweet, and super creamy, just like the pie itself.
Into my Vitamix went some frozen banana, canned pumpkin, unsweetened almond milk, cinnamon, unflavored protein powder, and, the secret weapon, APPLE BUTTER! Ah hah, it strikes again (last seen in my apple slaw last week).
Blended up into a tornado of spicy, sweet, beta-carotene goodness, I knew I had made something shy of being a work of art that had to be shared with the world.
Super easy, super nutritious, and super delicious. Top with a sprinkling of toasted almonds, granola, dried cranberries, pomegranate seeds, or even gluten free gingersnap/graham cracker crumbs.
Indulging your sweet tooth before 10 a.m. never tasted so good, y’all. No sugar rush required.
