Praise the lawd, it’s FRIDAY peeps!
AND it’s almost the first day of October! That means, by law, it must start getting cooler. Right? If I can’t take it anymore, I may have to buy a pumpkin this weekend.
Stepping back into my childhood, I remember always loving sweets. I was usually inclined to things that weren’t chocolatey, such as strawberry TCBY, lemon cookies, and berry cobbler. I was a weird kindo, thinking chocolatey foods like plain M&Ms, chocolate milk, and milkshakes were too chocolatey and made me too thirsty.
I can remember one of my dear friend’s mothers introducing me to this baked square of goodness that in the south we call a Hello Dolly. To those of you who wonder if I’m making a Dolly Parton reference, well, I’m not. These are also known as Magic Bars or 7-Layer Bars.
Layers of chocolate, nuts, coconut, butterscotch, and, the lifeblood of southern cooking, sweetened condensed milk enrobe a buttery graham cracker crust. How could you not enjoy that sugary, textural delight?!
You may be thinking, good lordy Michelle, you call yourself Paleo. You should be ashamed to be waving around such sweets in front of us…some health expert you are…
Well, with it being Friday, most of us think it’s time to kickback, relax, and indulge a little…and I’d say you’re totally right. I really believe it’s important to give yourself a bit of flexibility with your food choices throughout the week.
You know if you can handle moderating little treats throughout the week (one glass of wine here, one cookie there) or if you’re better off staying away from anything tempting until one meal or day when you let lose and indulge. Either way, I think indulgence can be a healthy part of anyone’s week as long as you feel okay after doing so.
I’m more of a moderator. I like to have a few dates or dried figs with about five dark chocolate almonds every night. I can stop at just a few, usually because I’m so wiped out I’m about to fall asleep anyways.
But there’s also about once a week when I want a glass of wine or two with dinner and some dessert. Now when I say dessert, I’m not going to have a carton of Ben and Jerry’s Chubby Hubby or half a pumpkin pie. I may have a paleo brownie with a scoop of ice cream or something of that nature.
OR a Paleo Hello Dolly with some So Delicious Cashew Cluster Ice Cream (see Wednesday's What I Found at Wal-Mart for my review)…this dessert=life changing. And this is coming from a lady who is married to the owner of a bakery, so I know a thing or two about desserts.
In order to transform this Hello Dolly into a less-processed, more clean treat, I mainly needed to tackle the crust and sweetened condensed milk. Coconut flour and coconut oil are the main staples of the crust, and coconut milk and honey reduce down to a caramelicious sauce that binds the chocolate, coconut, and nuts together.
These little beauties would be perfect for a tailgate since they are super portable, are made a day ahead, and cut into bite-sized nibbles for football-watching noshing.
If you don’t like coconut or nuts, you could easily leave them out and stlll have a delicious treat; just amp up your other toppings to ensure for maximum delightfulness.
Start your weekend off right with a batch of these Hello Dollys. Pair with a glass of dry cab or chardonnay and you’ve got yourself a Friday night, y’all!
