Zucchini, you bland, watery vegetable you. I’m sorry people mistreat you by steaming or boiling you into a mushy mess. You deserve more than that; you deserve to a beloved member of the vegetable family, not just a filler in a vat of steamed vegetables on a cheap buffet.
Today, zucchini, you’re going to be a star. Everyone is going to want to invite you to their birthday party and sit beside you at lunch. I promise.
Oh boy, I’m starting to channel my elementary school teacher skills on a vegetable. That may mean I need to go back to work soon. Sigh…
So, Paleo zucchini bread. It’s not an oxymoron. You can maintain your health and nutrition goals AND still eat bread. We’re just going to swap out some of the traditional ingredients that are inflammatory for cleaner, more nutrient-dense ones.
This easy quick bread uses coconut flour (you can get it at Walmart!!), eggs, honey, coconut oil and zucchini. Aside from a few normal baking additions that you already have in your pantry, that’s it!
Did I throw in some dark chocolate chips? I sure did. Girl’s gotta live a little, and sometimes you just need some chocolate in your breakfast. Dark chocolate is loaded with antioxidants, so it’s pretty much like running an extra mile while eating your breakfast…pretty much.
Never worked with coconut flour? Never fear. It’s gluten-free, low in sugar and carbohydrates (low glycemic so it won’t spike your blood sugar like traditional flour) plus high in fiber, protein, and healthy fat. The fats in coconut products are medium chain fatty acids (MCFA) and have been found to aid in a healthy metabolism.
Here’s your comparison for ¼ c. serving-
Coconut flour- 120 calories, 4 g fat, 4 g protein, 10 g fiber (60% daily requirement), 16 g carbs, 2 g sugar
Wheat flour- 100 calories, 0 g fat, 4 g protein, 3 g fiber, 18 g carbs, 1 g sugar
In my recipe, you only need ½ c. of flour, versus a typical recipe that uses 1 ½ or 2 cups of flour. Score!
