Hello. My name is Michelle. And I’m addicted to chocolate and peanut butter.
It’s kinda a problem.
Do I even go so far as to put nut butter on brownie Quest and chocolate RX bars?
[Sighs with head down], I confess to y’all I sure do.
Do I even go so far as to grab a spoon and munch on peanut butter straight from the jar?
[Another heavy sigh] I sure do.
At least I have made brave, profound steps away from chemically sweet, more processed treats. Baby steps, right? I no longer satisfy my chocolate-peanut butter cravings with peanut butter M&M’s, Reese’s Cups, Reese’s Pieces, and Butterfingers. I’ve found other, more redeeming ways to satisfy that urge without going overboard.
For months now, y’all have watched my addiction unfold, from my homemade almond butter M&Ms I made at Halloween to keep my paws out of the trick-or-treater’s candy to my dark chocolate peanut butter protein shake, there is always a time and a place in my life for chocolate and peanut butter, or almond butter or cashew butter or hazelnut butter.
It’s been a constant craving throughout this pregnancy that I’m 99.9% sure would still be in existence without a child growing within me.
Luckily, I know I’m not alone in my struggles. Many of you know what it’s like to be staring down into the crunchy almond butter jar, spoon in hand, knowing you’re about to do something you probably shouldn’t do. We’re in this together!
After 27 years of ceaselessly fighting these choco-nutty urges, I’ve decided to embrace it. If you can’t beat em, join em.
So today I’m sharing with y’all my latest dark chocolate+PB craving satisfaction.
They’re healthy. They’re Paleo. They’re packed with protein and healthy fat. And they’re downright delicious.
Yup, we’re making, or more like assembling, no-bake peanut butter protein cookies today! Come on, embrace the dark side and live a little with me.
At this point in my pregnancy I’m having a hard time eating very much. Being 5’2’’, there’s only so much space for this boy to grow; therefore, he’s really hogging my stomach’s food-storage real estate. As a result, I just can’t eat very much without getting EXTREMELY uncomfortable. I know what it’s like to feel uncomfortable after eating too much at a birthday party or holiday celebration…that feeling when you go back for seconds and you really weren’t that hungry or when you have dessert even when you’re already stuffed. Been there, done that, gotten that T-shirt.
No, third trimester fullness is a whole different ball game. Often, I know I want to and need to eat a little more, yet I just can’t stomach it (literally). Therefore, I’ve had to resort to bite-sized treats to satisfy my sweet tooth.
And that’s how these little puppies were invented this weekend. Problem=I can’t eat a full dessert. Solution=Make smaller yet equally delicious versions of it!
These protein cookies are fantastic for some many reasons.
What more persuasion could you possibly need?
My recipe, if you can call it that, uses chocolate protein powder and powdered peanut butter. You could use any flavor of protein powder and up your cocoa powder if you didn’t have chocolate on hand. If you don’t have powdered peanut butter, increase your almond flour and nut butter a tad.
To make these feel a little extra special, melt a few handfuls of chocolate chips and drizzle that melty goodness over these cookies with a fork.
I keep these stored in the refrigerator to grab and munch on all week. Just finished teaching Zumba? You deserve a protein cookie! Just got home from working all day shaping the future minds of America? You deserve a protein cookie! Just finished watching a season of Gilmore Girls? You deserve a protein cookie!
You’ve woken up today! You’ve put pants on! You deserve a protein cookie today, too!
