After a wild weather week, it looks like things are finally settling down...NOT!!!!
From near 90s to hail to flurries and everything in between, springtime is in full swing here in Texas.
So I’m wanting rosé and coconut milk ice cream one day, then oatmeal and soul-warming soup the next.
And despite the warm days of spring settling in, it still gets refreshingly chilly at night, so I’m not quite ready to say so long to soups just yet.
Which is why I’m so pumped to share this spring-tastic soup with y’all!
It’s creamy yet light, comforting without being heavy.
Plus, it’s loaded with protein, fiber, and TONS of lemony bright flavor.

Growing up with two older brothers meant I attended A LOT of sporting events…football games, soccer games, baseball games, swim meets.
And while I did my best to just go with the flow, it did help to have a little persuasion here and there…largely in the form of different take-out dinners from restaurants near the sports fields where my brothers were sweating it out.
So when a Greek restaurant opened up near my brothers’ high school, we had to give it a whirl, seeing as Knoxville had 0 Greek restaurants at the time.
As a family of 5, we ordered a little bit of everything. And I know the pizzas were tasty and kebobs were top notch, only one dish sticks out in my memory: Lemon Chicken Soup.
I can still remember that thick, creamy, lusciously lemon broth studded with tender chicken and rice…makes my mouth water just thinking about it.
So when these chilly April nights started to set in and I wanted soup that wasn’t more chili, this is what I concocted.
Now, you may be asking yourself…how can you make soup thick and creamy without any butter or cream or sour cream?
Yup, that ho-hum cousin of broccoli is actually the BOMB when it comes to making recipes fluffier and creamier, including soups!
You just cook it up with some other flavor all stars like onion, garlic, and chicken stock, blend it up, and you’ve got a dreamy, creamy base that can be used to thicken casseroles, like my Chicken Pot Pie or Kale+Butternut+Sausage Bake, smoothies, like my Carrot Cake Protein Smoothie, and soups like my Chicken Chowder and this Lemon Chicken Soup!
So how easy peasy paleo (and Whole 30 and Keto) is this?
Serve it with a Greek salad and slice of gluten free cornbread for a fabulously comforting, springtime meal that’s nutritious AND the whole family will love!
