Lunchtime, I must admit, is my least favorite meal of the day. As a teacher, it is the shortest thirty minutes of the day, usually overloaded with seven other tasks such as going to the bathroom, walking a kid back to the classroom because he left his lunchbox, or checking the flooding inbox.
In addition to the time crunch us teachers face, I just don’t find lunch fare as enticing as breakfast or dinner. Breakfast foods will always be my favorite, but dinner is a close second because it means bedtime is near (yes, I’m elderly at heart).
But lunch can be tricky, especially if you’re trying to stay healthy. Yes, we can put lettuce on a plate with some chopped deli meat and call it a salad, but that’s so boring.
Lunchtime triggers my you’re-slightly-over-halfway-through-your-school-day celebration. Therefore, I try to make my lunches as celebratory and fun as possible.
Real talk, y’all- are my lunches sometimes just leftovers? Absolutely. But I like to make something over the weekend that is just for my lunch at work. That way, I’m not bored by eating Monday night’s dinner for Tuesday’s lunch.
Hey there, honey mustard chicken salad. You’re not boring, complicated, or unhealthy. You’ve officially made the lunch team.
I came up with this idea a few weeks ago when thinking about some new lunch items to add to my teacher-lunch repertoire. My thought process went a little something like this…I love honey mustard. I love chicken salad. BAM! Honey mustard chicken salad was born.
This chicken salad comes together in under five minutes, is studded with juicy red grapes, and is mayo-free. Despite my southern upbringing, I am mayonnaise-phobic. It makes me gag and cringe at the same time.
So, I’ve had to think of more creative ways to make dips and dressings that usually rely upon the bizarrely creamy condiment of the South. Unsweetened coconut yogurt, to the rescue! This stuff gives chicken salad the tanginess and creaminess of mayo. Add in mustard, honey, apple cider vinegar, and olive oil and you’ve got yourself a solid honey mustard dressing.
If you’re in a time crunch, you don’t even have to cook the chicken yourself! Zip on over to the bakery section of your local grocery store and pick up a rotisserie chicken. Pick the meat off that bad boy, add some sliced grapes, and mix in my honey mustard dressing and you’ve got lunch for a week. Easy peasy lemon squeezy, folks.
