Sometimes you feel like a nut. Sometimes you don’t.
And sometimes you realize it’s apart of your very namesake, so you may as well just embrace it.
With a last name that roughly translates to ‘Son of Nutt’, you’d better believe I have a love, respect, and thorough enjoyment for all forms and fashions of nuts: hazelnuts, pecans, almonds, pistachios, walnuts, peanuts, brazil nuts.
They are all special in their own way.
And today, y’all, Mrs. McNutt here is paying almage to her namesake with an easy, peasy, lemon squeezy recipe that is perfect to have on hand this time of year- spiced nuts!
A little sweet, a little salty, and just the right balance of spices, these spiced nuts are absolutely delightful and are ready in under half an hour.
For real, in the time it takes to watch one of those animated classics like Charlie Brown Christmas or Frosty the Snowman, you could whip up a few pounds of savory-sweet spiced nuts.
Let’s take a quick walk through the simple steps:
1) Melt butter or coconut oil or ghee.
2) Pour in syrup and spiced.
3) Drizzle that over the nuts.
4) Bake for 15 minutes.
5) Add cranberries and nosh away.
This recipe could easily be adapted to suit your fancy, too. Like them a little more savory and spicey? Just up your chili powder, cayenne, and cumin.
Want to use peanuts and almonds? Go for it!
Want to add fresh rosemary and honey at the end? You go for it.
These nuts make a perfect little gift to give to neighbors, secretaries, and those other people in your life you want to spread a little Christmas joy to.
Or, you could make these and keep them in your fridge to have on hand over the next few weeks….sprinkle these on a salad, toss them on top of your morning oatmeal, layer them on top of a baked brie, or just snack on them for a little boost of protein, fat, and fiber.
But be cautioned from my mistake…when I made these on Sunday, I did go a bit overboard on the snacking. I got REALLY FULL REALLY FAST. These are calorically dense, so keep the snacking in moderation.
