Pumpkin flatbread (we’re calling it that cause it sounds faaaar more sophisticated to your holidays guests than pizza) topped with crunchy, salty, sweet, and smoky bits of joy.
Now, before you roll your eyes and think to yourself, “Michelle, I’m not stinkin Martha Stewart. I can’t pull off a show-stopping party stunner like that.”
You stop that negative talk right now. Because guess what?
You can pull off this flatbread without even breaking a sweat thanks to:
Yup, this make-ahead marvel will not only wow your guests tastebuds but it will keep everyone’s waistlines in check thanks to no gluten, no dairy, and no soy (yup, a lot of storebought pizza crusts sneak soy into them).

When it comes to my favorite foods to paleofy, pizza has to be one that I keep coming back to.
Between mixing up the crust to the sauce to the textures and flavors of the toppings, I love love love making pizza.
But pizza kinda gets a lowbrow reputation as being a food of desperation, a scrambling parent’s last resort, an option selected when there seems to be no time or effort left in the day for a homecooked meal.
You just pull out one from the freezer, or make a call to Domino’s and have one on your doorstep in 20 minutes.
Either way, pizza is seen as a hail Mary attempt at a meal.
However, something magical happens to this unglamorous, child’s birthday party standby when you put a sophisticated spin on it, allowing it to go by another name- a name worthy of cocktail parties, gallery openings, and French brasseries:
It’s still crust+sauce+toppings.
But it now has become something you will fork over $12 a serving for the next time you hit up the swanky wine bistro.
And that’s exactly why I’m sharing this festive flatbread recipe with y’all today… to wow your holiday guests with something that looks and sounds SUPER fancy pants when, at the end of the day, it’s just storebought crust+canned pumpkin+brussel-bacon topping.
Super inexpensive to feed a crowd with.
And, of course, easy peasy paleo.
Plus, they’re a break from the traditional gooey and goopy.
Just think about it…
1) They’re easy to pick up and nibble on while holding a glass of wine (super crucial during the holidays),
2) They’re super versatile to the palettes and dietary needs of your guests…got a vegetarian or vegan crew? Hold the bacon off this flatbread and add mushrooms instead.
3) The parts (crust, sauce, toppings) can be made ahead and assembled in about 5 minutes right before your guests arrive.
