Sometimes, you kinda just want a bite of cookie dough.
Cookie dough+coffee….oh nelly…
You know I’m right.
And when it’s Christmas time, I want that cookie dough to be representative of the festive atmosphere around me…it better be loaded with ginger and nutmeg and all those spices that make ya just wanna put on that reindeer sweater and prance about to your beloved Rafie’s Christmas cassette.
Okay, so maybe I took that one a little too far, but I know y’all wouldn’t argue with me about the gingerbread cookie dough part.
Well, friends, it’s a Christmas miracle here in the mystical HHT world, because I’ve got a recipe that takes the sweet joy of eating cookie dough and combines it with all that is paleo AND vegan AND whole 30.
Yup, this recipe today has NO:

I’ve shared with y’all that I absolutely love cookie dough.
In fact, there’s been plenty a shameful moment in my life that I have purchased a log of the sugary stuff with ZERO intentions of doing any baking.
But nowadays, my body just can’t stomach that.
I love the idea of diving face first into a bowl of batter or cookie dough, but I know I would have some solid GI repercussions shortly after doing so.
That’s exactly why I made this recipe!
So I can be a normal human and eat some cookie dough…well, cookie dough-like product.
And, believe it or not, this cookie dough is actually doing to do good to my body…

Just think….cold winter’s morning+steaming cup of coffee+spicy, not-too-sweet gingerbread cookie dough truffle…throw in a baby that’s sleeping late and that sounds like a PERFECT morning to me!
