Good morning, y’all! How’s it hangin?
For me, life is grand. My sweetness just turned 2 months old, and, as if it were some magical 2 month old rule, he started sleeping through the night…I’m talkin’ he goes to bed like me at 10 p.m. and sleeps 8 ½ hours like me.
What a gift!
Now, just because my little nugget is sleeping more at night does not mean I have all the more freedom and time and ease throughout the day.
His naps are still rather unpredictable at best, so throughout the day it’s a total crapshoot as to how much free time mommy gets.
As a result, I still don’t have the time like I did pre-McNugget to dilly dally in the kitchen. When it’s time to meal prep and cook, I need things that are pretty simple and quick.
That’s why I’m SOOOOO excited to share this new recipe with y’all today.
1) so simple- 4 ingredients people
2) so quick- 120 seconds quick…you’ll spend more time at the average stoplight cruisin' through town
3) so nutritious- heart-healthy fats, fiber, potassium, and oh so much more
4) so addictively delicious- you’ve been warned
You all know peanut butter.
You’ve probably met hazelnut butter (cough cough, Nutella).
You’re familiar with almond butter.
You may have even acquainted yourself with cashew and sunflower seed butter.
But today, I introduce you to the latest and greatest addition to the nut butter world (yes, coconut can technically be qualified as a nut…and a seed…and a fruit…it’s multitalented, y’all): COCONUT BUTTER!
Hold onto your knickers, gang. This is going to ROCK YOUR WORLD!
Once upon a time, in a magical, mystical foodie fairyland called Central Market, a sizably pregnant me found herself waddling through the protein bar/nut butter section (one of my favorite regions in all the land).
I browsed the small batch peanut butters flavored with locally sourced honey and organic chocolate hazelnut butters and mocha-almond butters when what to my wondering eye should appear, but a jar labeled ‘Coconut Butter’.
WHAT THE WHAT?!
Upon further investigation, I noticed that, not only was it a condiment made of coconut, it was birthday cake flavored.
Coconut birthday cake in a spreadable form?! Take me now, Jesus.
As my Paleo foodie heart nearly pitter-pattered right out of my chest, it immediately sunk once I saw the price tag- $12.
$12 for one jar?!
I could buy two pounds of grassfed beef, or 6 pounds of organic Pink Lady apples, or two matinee movie tickets at Corsicana’s finest Movie Bowl and Grille!
But, being very pregnant and feeling as if my body had earned such a splurge, I bought it. While I was tempted to crack into the jar the second I hopped in my car and dive right in without a hint of shame, I restrained myself until I got home and then promptly shoved a spoon into that jar of creamy goodness.
Shiver me timbers, y’all…that stuff is GOOD!
Worth $12 good?
Maybe…maybe not…and then, one night at about 3:38 a.m. while spending some QT with my little man, it hit me- how hard could it be to make this manna from heaven myself?
Not hard at all, mis amigos.
You will need:
1) Blender or food-processor
2) 6 cups of shredded, unsweetened coconut (which turned out to put me back about $6, and that was for the organic stuff! Not bad)
3) a few minutes of free time
Unlike making your own nut butter, which can take 10-15 minutes to grind down in the blender, the coconut almost melts before your eyes in a minute or two in the blender.
From there, you can keep it simple by just adding a dash of salt. Personally, I wanted my coconut butter to be a little sweet like the one I purchased, so I added in a few tablespoons of coconut sugar and a teaspoon of vanilla and teaspoon of butter extract (secret ingredient), but you could omit those if you wanted it to be unflavored and unsweetened.
If you’re having a hard time getting your coconut to melt together, I have a few tips:
Storage wise, you do not need to refrigerate this stuff. I keep mine in a glass jar in my pantry. Like coconut oil, it will harden up at room temperature, so you can scoop some out and melt it in the microwave if you want to spread it on something.
You may be wondering how in the world to use your batch of coconut butter…oh my goodness, the sky is the limit, but here are some of my favies-
And maybe, just maybe, I have a protein-packed, birthday cake flavored snack coming at y’all very soon since your very own HHT has her own birthday coming up, and it may or may not use this coconut butter, too. Just maybe…hint hint, wink wink...
