According to my watch, y’all, summer is here.
How can I tell? Simple:
1) School is out.
2) The Splash pad at the park is open and covered with my former students all hours of the day.
3) My farmer’s tan is returning.
4) My glass of Prosecco doesn’t stayed chilled for nearly as long, thus needing to be consumed even faster.Darn.
5) Fresh watermelon is flavorful, vibrant, and cheap.
Based on these 5 facts, I deduce summer is here.
And when it’s summer, I crave lime BIG time.
From my paleo key lime pie to lime pistachio bites, I have shared my love of lime with y’all before. And guess what? The saga continues today with my latest obsession: Coconut Cashew Lime Bites!
Healthy, simple, and loaded with coconutty-lime greatness. What’s not to love?

Because of you, guacamole, pad thai, and margaritas are all the better.
While this little citrus nugget plays nicely with so many savory and sweet flavors, I’d argue his best matchup is the mighty coconut.
Michelle, haven’t you already done a coconut lime recipe? That’s sooo summer 2016. Sure, my pregnancy last summer had me jonesing for all things tart, and thus I concocted a coconut lime chia pudding that rocks.
But now that summer is sneaking its way back into Texas, time to break out the SPF, Jimmy Buffet, and lime-flavored everything.
Now, let’s talk about the beauties for a second. Sure, they look like something you would pickup in the bakery section of Whole Foods for $4.99/half dozen, but friends they are SO easy, SO delicious, and, most importantly, SO healthy!
Like my Chocolate-Covered Strawberry Lara Bars or Pistachio Lime Bites, these bright bites of tropical goodness rock for so many reasons, including they:
Because they’re just as tasty as they are nutritious, these bites make for a perfect pre/post-workout snack as well as treat for after a meal.
Though I don’t think you’ll have any trouble polishing them off in a week or two, you can freeze extras to enjoy for another day.
Goodness, y’all, when that guy created that infamous song, Put the Lime in the Coconut, he knew what he was talkin’ about.
Now that summer is settling in here, whip up a batch of these, grab a fruity umbrella drink, and blast that Jimmy Buffet.
