As a child, there were only 4 types of acceptable pasta meals:
For the first 12 years of my life, that was the extent of my pasta consumption.
And for many of y’all’s little nuggets (or significant others), that may be as wide as their pasta palates extend, too.
While pasta is 1- cheap and 2- easy to prepare, it’s not the healthiest option for our families and ourselves.
Which is why I’ve crafted yet another spaghetti squash casserole…they’re a perfect gateway into the world of veggie-based pastas, yet they still have enough other distractions going on that it’s not too overtly veggielicious.
Now you may be asking yourself, how in the world do you make a Paleo+Whole 30 alfredo sauce? Sounds like there must be some Harry Potter levels of sorcery involved to make that happen.

I’ve been on team spaghetti squash for a loooooong time now.
It’s so naturally creamy and buttery, and the way the flesh just scrapes away into noodle-like threads is just magical! Plus, it's a low-carb, paleo, vegan, and whole 30 way to get your pasta fix sans the, well, actual pasta.

I was able to throw it all together while my 10 month old munckin went back and forth between trying to open every cabinet in my kitchen and chasing me around the kitchen trying to grab hold of my feet.
Therefore, there’s NO reason y’all can’t get this bad boy whipped up this weekend.
