After a wild weather week, it looks like things are finally settling down...NOT!!!!
From near 90s to hail to flurries and everything in between, springtime is in full swing here in Texas.
So I’m wanting rosé and coconut milk ice cream one day, then oatmeal and soul-warming soup the next.
And despite the warm days of spring settling in, it still gets refreshingly chilly at night, so I’m not quite ready to say so long to soups just yet.
Which is why I’m so pumped to share this spring-tastic soup with y’all!

Yup, I’ve got a soul-warming, body-fueling stew that’s simple, make-ahead friendly, and healthy…I’m talkin Paleo+Whole 30+Keto!
Lean grassfed beef stew meat, digestion-boosting cabbage, and a few veggies are all y’all need for this St. Patrick’s Day stew that’s magically delicious.
No leprechauns, magic rainbows, or sugary marshmallows here.
Just low carb, high protein, make your soul happy stew.

Valentine’s Day is creeping around the corner…ladies, it’s time to start “accidentally” leaving that Kendra Scott necklace or Tory Burch clutch website up on your laptop…
And gentlemen, it’s time to start making those dinner reservations, ordering those flowers, and other thoughtful signs of affection.
While that big box of Godivas may seem like just what a lady wants on Valentine’s Day, it is what it is: a big box of unnecessary sugar.
So instead of pumping your sweetie with processed sugars and oils and chemicals, why not make something from the heart that’s actually good for your heart?!
I’d say my Paleo+Whole 30+Keto Chocolate Chili would do just the trick!

Don’t worry…it’s NOT like someone has dropped a handful of Hershey’s kisses into a meaty, hearty bowl of chili…just a sprinkling of organic cacao powder lends a rich, deep layer of complexity that you never knew your chili was missing.
I served it to three long, tall, Tex-Mex-lovin, Waffle House-devouring men and they had NO idea chocolate was simmering alongside their beef and tomatoes.
So let’s crank up the Michael Buble, bust out the grassfed beef AND cacao powder, cause it’s about to get romantic up in here.
Kale, yeah, it’s FRIDAY!
Way to go, y’all, we’ve practically made it to the weekend.
And speaking of kale, can I share a kale confession?
This is a safe place, after all, right?
I don’t really like kale.
I don’t want it in my Caesar salad.
I don’t want it massaged with lemon olive oil.
And I really don’t want it in chip form (side story: I made my one and only batch of kale chips early in my first trimester…hot kitchen, baking kale, nauseous baby momma…I couldn’t stomach even trying one and had to immediately throw them all away).
If I’m gonna eat kale, I want it hidden.
I’ll tolerate it snuck into a soup with a lot of other business going on or slipped into a smoothie if there’s plenty of fruit to cover it’s pungent flavor.
And that’s the kind of recipe I have for y’all today.
A casserole that allows you to fill your kale quota without having to actually taste any kale.
It’s a kale recipe for those of y’all that aren’t kale people.
Oh, and it’s 100% Paleo and Whole 30.
And dang delicious.

Hopefully you are not too sick and tired of how invasive pumpkin spice is becoming…I know it’s one thing to see it in cookies and muffins, but in deodorant?

Well, pumpkin chili, of course!
Don’t worry, my fellow Texans and carnivores, I didn’t swap out our beloved beef for pumpkin and beans (though my vegan homies could totally do that).
Nay, I dared to push pumpkin into the world of meaty, savory goodness.
