In the dessert world, there are two types of cake: those with cream cheese frosting and those without cream cheese frosting.
As a result, Red Velvet, German Chocolate, and, my personal beloved, Carrot, are amongst my favies, and it’s largely all due to the cream cheese frosting (though I’d argue cream cheese icing can make a shoe tasty).
Alas, neither cream cheese or icing are paleo or healthy for that matter.
And let’s be real, cake isn’t a solid choice is you’re wanting to eat clean and feel fueled and energized and ready to kick some booty.
But what is it about carrot cake that rocks my socks so much?
Well, it’s a little spicy, it’s a textural rollercoaster thanks to raisins and pecans and coconut and, if I’m lucky, pineapple, and it’s always so tender and moist (sorry if you’re apposed to that word…it's just so appropriate in this scenario).
It’s also usually baked up with a TON of sugar, a TON of vegetable oil, and slathered in more sugar and cream cheese and butter.
Sounds like a direct ticket to inflammation station indeed.
But what if there’s a way you can capture all the gloriousness of carrot cake- the coconut, the carrots, the spice, the pecans, the pineapple even- without shooting your blood sugar to the moon and sending your body into some serious inflammation?
Oh, and no baking required.
And it's paleo and vegan and Whole 30.

Happy Pumpkin Tuesday, my little pumpkin pie pops!
Y’all, pumpkin is EVERYWHERE and I LOVE IT!
From ice creams in the freezer section to Pop Tarts and Cheerios in the cereal aisle to deodorant and lip balm, it is THE ingredient of the fall.
But, I’d argue, one of the game changers for this beloved poster child of fall was when Starbucks started swirling it into their iconic lattes nearly 15 years ago.
Who knew pumpkin+coffee= spicy, sweet, caffeinated bliss!
And while Starbucks has come a long way in making their pumpkin spice latte a lot cleaner and healthier, it still has a whole lotta sugar.
My pumpkin spice creamer is 100%
Plus, there’s no cooking required!
And it costs a whole lot less to make a batch of my creamer than to buy a PSL every single day.
So get the coffee brewin, pull out your favorite pumpkin mug, and let’s get to it!

Ummm, just now realizing how we gravitate toward certain sides when being photographed together...
In honor of my sister from a different mister, I’ve put on my bartender hat today to put a flavorful, fresh spin on her all-time favorite cocktail: the Moscow Mule.
Neither of us are huge fans of mixed drinks. This Healthy Happy Texan will order the following or variations of the following:
1-a Moscow Mule,
2- a margarita, or
3- a sparkling wine-based drink.
My sister? She pretty much sticks to Moscow Mules and has been known to partake in an occasional mimosa at celebratory brunchtime gatherings.
Exhibit A from her wedding day morning after a 1-month pregnant me led her and a few other brave bridesmaids in a wedding wod....
Aside from these rare celebratory gatherings, though, she’s more of a Cabernet/Pinot Noir kinda lady.
But a glass of Mark West Pinot won’t do the trick to toast to her being born and sharing so much joy and love and light in this world.
Nope, I had to concoct a spankin new Moscow Mule just for the occasion.
So let’s bust out the gingerbeer and trade that vodka for some tequila, and cheers to you, JuJu!
As a Texan, I’m no stranger to the heat.
It’s hot in the summer.
It’s hot at Christmas.
It’s hot at night.
And, of course, it’s hot throughout 98% of the fall.
On top of all that, Texans love heat on their plates.
So, instead of fighting the natural tendencies of both the local environment and culture, I’m embracing them with my first pumpkin recipe of the season:
