In the dessert world, there are two types of cake: those with cream cheese frosting and those without cream cheese frosting.
As a result, Red Velvet, German Chocolate, and, my personal beloved, Carrot, are amongst my favies, and it’s largely all due to the cream cheese frosting (though I’d argue cream cheese icing can make a shoe tasty).
Alas, neither cream cheese or icing are paleo or healthy for that matter.
And let’s be real, cake isn’t a solid choice is you’re wanting to eat clean and feel fueled and energized and ready to kick some booty.
But what is it about carrot cake that rocks my socks so much?
Well, it’s a little spicy, it’s a textural rollercoaster thanks to raisins and pecans and coconut and, if I’m lucky, pineapple, and it’s always so tender and moist (sorry if you’re apposed to that word…it's just so appropriate in this scenario).
It’s also usually baked up with a TON of sugar, a TON of vegetable oil, and slathered in more sugar and cream cheese and butter.
Sounds like a direct ticket to inflammation station indeed.
But what if there’s a way you can capture all the gloriousness of carrot cake- the coconut, the carrots, the spice, the pecans, the pineapple even- without shooting your blood sugar to the moon and sending your body into some serious inflammation?
Oh, and no baking required.
And it's paleo and vegan and Whole 30.
Yup, all that, and more, are what’s goin down in my carrot cake protein shake today!
To say that I’m a carrot cake fan is a bit of an understatement.
I’m craycray for the stuff.
I would have totally had it for my wedding cake but I selflessly selected a more popular and summer-appropriate flavor.
But with January here and many of us rededicating to a cleaner lifestyle with less screens and alcohol and sugar and more sleep and sweat and laughter, there are times, I’ll admit, I still just wanna eat a hunk of carrot cake straight from the fridge with a fork while no one is around.
Y’all know what I mean, right?
Anywho, this protein shake is luxurious, decadent, and loaded with all the flavors of carrot cake.
Plus a few healthy toppings really transform it into a clean treat.
On top of all that, it's SUPER easy.
After all, I've got a little mobile munchkin whose army crawlin' into coffee tables and pullin' up on cardboard boxes left and right. I need a simple breakfast/lunch that I know is going to fuel me through the day.
Don't believe me that it's easy?
Cool, creamy, spiced protein shake topped with coconut, pecans, pineapple, and raisins….oh and just maybe a dollop of coconut whipped cream or Greek yogurt to give it that cream cheese icing effect.
Serve it in a parfait glass if you’re feeling fancy or in a bowl if you wanna go bananas with the toppings. And why yes, you could totally put bananas on it, too!
