Well, if it did, I’ve got a recipe for y’all that is healthy and super comforting…just the kinda thing you need after a long week of hard work and too many Hershey’s.
So snuggle up in that blanky and pull on those yoga pants.
We’re getting cozy today with my beloved Butternut+Bacon Beef Stew!
After months of battling through the blistering heat and humidity, fall has finally settled into Texas.
And once that chill settles into the air for more than 36 hours at a time, it’s soup season at my house!
When it comes to soup, I usually fall into two categories: velvety and smooth or hunky chunky.
This recipe, hands down, falls into the latter category.
It’s hearty, makes a ton, and just the kinda thing I wanna eat when I need to start pulling out the sweatshirts and fuzzy slippers and fleece-lined running tights.
I grew up eating beef stew. And while this recipe certainly takes a step away from the traditional version I enjoyed as a tiny tot, it’s just as comforting as the batch my mom makes.
Hunks of tender beef, chunks of sweet winter squash, soul-warming cinnamon, a few glugs of red wine….what’s not to love?!
Prunes probably don’t fall into the ‘love’ category for most of y’all.
But guess what?!
Aside from helping you (and my kiddo) do your business, but they have so much else goin on for them, too!
You won’t believe the subtle sweetness and velvetiness those little suckers add to this stew, not to mention nutrition.
Those little nuggets are loaded with fiber, potassium, Vitamin K, magnesium, manganese, and copper.
