How are you this fine, almost February morning?
Well, I’m a bit down…you see, I’ve just realized football season is about to come to its official end.
Sad, I know.
And while basketball season is still rocking on, I’m not a basketball kind of girl.
Shocking, I know.
So, instead of having a pity party over the conclusion of football for the time being, I’m having a PALEO PARTY instead!
Cause when watching football, ya just gotta have snacks.
And what better snack than my bite-sized bundles of buffalo chicken goodness.
Um, maybe PALEO/WHOLE 30/KETO RANCH DRESSING!!!
That’s exactly what’s going down today.
So whether you’re a football kinda person or you just watch for the half-time show, this easy peasy recipe is a winner for everyone.
Too bad that’s not going to be the case with the Eagles and the Patriots this weekend...someone's gotta win, and someone's gotta lose...all I know is we won't be losers with this recipe!
I love football.
I love the passion and camaraderie and tradition.
But mainly, y’all, I love the snacks.
I can remember going to my first Super Bowl party in high school, and it’s exactly what you’d imagine: the girls sat behind the couch area talking while the guys were huddled around the TV. Only during commercials or the halftime show would the guys remember girls were actually in the same room.
And while these parties were not as helpful to my love life as I hoped as a teenage girl, they did have one HUGE perk: crazy delicious snacks.
Cheesy corn dip with Frito Scoops, goopy bean dips with Tostidos scoops, French onion dip with Ruffles potato chips…
Come to think of it, I’m pretty sure I ate several varieties of chips and dip for dinner that night.
Add in the sodas and brownies and puppy chow and it’s a miracle my body could actually sleep that night.
Yet here I am. I survived.
But if I ate all of that today, the results would be a gastrointestinal catastrophe.
Which is exactly why I set out to create today’s Super Bowltastic recipe that won’t leave you and your health goals feeling defeated by the end of the game.

Seriously, gang, the secret to these crispy on the outside, juicy on the inside meatballs is baking them in their own mini muffin tin…they roast and boil in their juices at the same time…
