As a Southerner, I love love love casseroles.
From Thanksgiving’s mandatory Green Bean Casserole (of course with Campbell’s Cream of Mushroom) to Christmas morning’s sausage, egg, and cheese casserole to my mom’s weeknight wonder, Chicken and Dressing Casserole, food just seems better when thrown into a large dish and baked for 30+ minutes.
To me, it’s comfort food.
Not to mention they’re often crowd, freezer, budget, and make-ahead friendly.
Even before my little McNugget came into the world this spring, I was a HUGE fan of prepping a casserole on the weekend to reheat throughout the workweek for a quick, lazy dinner.
For those of y’all who haven’t experienced what it’s like to convince 70 small people to sit still and read and write and be quiet for 8 hours a day, believe me when I tell you that you wouldn’t wanna come home and cook after a day like that.
Casseroles=busy weeknight saviors.
Which is why I’ve whipped up another one for y’all.
And I just might have outdone myself on this one.
It takes all the aspects of a beloved burger experience- smoky barbeque sauce, savory sautéed mushrooms and onions, crispy bacon, rich umami of beef- and takes all of the sweaty grilling out of the equation.
Yup, I’ve got a burger casserole that is 100% Paleo, Whole 30, low-carb and will ROCK YOUR FAMILY’S WORLD!
This is going to become a regular in your household.
I pinky promise.
I am a burger kind of girl.
Not a thin-pattied fast food style burger, though.
I want a thick, juicy, fatty hockey puck hunk of meat.
Once that part is under wraps, it’s time to shift the focus to my favorite part of the burger experience: THE TOPPINGS!
What can you NOT put on a a burger?
Yeah, I ate non-grassfed, non-organic, non-blessed by the pope cheese. And it was delicious.
As someone who has been rockin the bunless burger world for a long time, I’ve learned I can enjoy waaaaaay more toppings if I pile them under, around, and, of course, on top of my burger and devour it with a fork.
Yeah, I eat my burger with a fork.
Judge on. Friends don't judge one another for eating casual foods with forks (pizza, tacos, barbecue=fork, fork, and more forkin good times).
But today, whether you like it or not, you will be joining me in my fork-eating-burger world, seeing as our burger today is in casserole form.
Speaking of which, y’all, this casserole is SO delicious and SO easy.
Now of course, when serving, off toppings like bacon, green onions, and WHATEVER THE HECK YOU WANT!
Peanut butter? YEAH!
Fried egg? WOAH YEAH!
Honestly, if there is a topping you think you’d like on a burger, give it a try on this casserole. I recommend serving your casserole in a bowl in order to increase and maximize your topping potential.
