Happy New Year’s Eve, y’all!
What are ya up to this evening? Are you laying low with Netflix, sweatpants, and a bowl of popcorn? Or are you heading out to a schwanky party with friends? Shooting off fireworks? Watching bowl games?
Believe it or not, I’m actually going out for a little romantic rendezvous with my mister. Since this is most likely our last weekend together until his work in D.C. is finished, we’re heading up to Dallas for a date night at The Mercury and a staycation at The Westin. Will we probably watch a movie in the hotel room and fall asleep at 10:48? Most likely, but at least we will be together.
This past week, I’ve enjoyed a few more classes courtesy of Knoxville’s YMCA branches. I’ve also had a few days off chilling out in the U-Haul with my madre. Nonetheless, I’ve done what I could to stay healthy and happy on the road (check out yesterday’s post for my healthy travel advice!).
Here’s what my boy and I have been up to stay fit.
Something y’all probably don’t know about me is that I love a good road trip. From our family’s annual trips to the beaches of South Carolina each summer to trips with my sorority sisters in college to Sea Side, Panama City, and, the doozey, Key Largo.
Now that I live in Texas, I’ve made the trek from Tennessee to Texas three times in the past five years. Yeah, it’s a whopper of a trip, but it’s kinda fun.
Usually, I make this traverse with my partner in crime, Mister HHT, who also loves a good road trip. He had to make the drive from Dallas to Greenville, SC a few times a year going to and fro our alma mater, Furman University.
This time, though, I have a new driving companion.
As someone approaching parenthood, I’m already learning the sacrifices I will be making for the sake of my son…and my mother, y’all, she is a prime example and model of this selfless love.
Case in point: she hopped in a 10-foot U-Haul with her favorite daughter and drove halfway across the country to transport baby supplies, dining room chairs, and other life necessities.
With all of that said, we’ve championed through 527 miles of the total 870 miles from Knoxville to Corsicana, spending last night in downtown Little Rock, Arkansas.
You better believe I have some advice for y’all about how to keep healthy and happy on these longer road trips. There are certainly some strategies I always use to stay on track physically and mentally when spending 7+ hours in the car. Saddle up gang!
With New Year’s Eve just around the corner, many of y’all are researching and planning on whipping up some festive, bubbly cocktails that the night often screams for…normally, I’d be right there with y’all popping those bottles and pourin’ the bubbly.
To me, any day is an appropriate day for a bubbly cocktail. Who says champagne, prosecco, and cava are reserved for weddings and New Year’s Eve?
I say you can pop a bottle any day you want to. I’m all for celebrating life, and I’m pretty sure every day that we wake up and are given the gift of living in this life is worth celebrating. Just sayin…
But, alas, pregnancy….no corks flyin’ through the air over at my house these days.
In case you haven’t figured it out by now, lil’ momma-to-be here does miss her occasional cocktails and glasses of wine. Nonetheless, I’m totally cool with trading 9 months of occasional alcoholic indulgences in order to bring a new little person into this world. Fair trade.
Still, there are some nights, especially when everyone around me is sippin’ on a lil somethin’ somethin’, that I feel a little left out of the party…
That’s where mocktails, such as my Paloma mocktail, comes to the rescue!
As I’ve confessed to y’all a few times, there are some weeks in which I set foot in grocery stores other than Wal-Mart. While I’m away from my beloved Corsicana Wal-Mart for another few days, I’ve decided to make the best of this time apart by sharing with y’all some goodies I’ve found at other notable stores.
Last week, I shared some of my seasonal favorites from Trader Joe’s.
This week, while browsing what kind of deals I could get on Christmas decorations, especially Christmas lights, I decided to mosey around Target and see what kinds of Paleo or at least gluten-free finds I could uncover for y’all. While there, I, of course, at to stop by the Dollar Section (which is totally the $3-5 section but whatevs) and the maternity and baby sections just for kicks.
Here's a round-up of some of the pregnancy, paleo, and all around good fun I ran into last night at Target. And P.S., if you're wanting to stock up on discounted Christmas decorations, scurry on down ASAP because they're going, going, almost gone!

How goes it? Are you back to work and back in the swing? Or are you, like me, enjoying a few more days of peace, quiet, wearing pajamas until almost noon, drinking coffee at a leisurely pace- before the calamity of school starts up again next week?
Whatever you’re up to on this glorious day, we’re all coming off the holiday highs of the weekend yet we’ve all got the same forecast ahead- New Year’s Eve.
Ah New Year’s Eve…a night of unrealistically high expectations for glamour and glitz that often boils down to half a bottle of prosecco, a bowl of popcorn, a few grilled filets, a dark chocolate truffle or four, and either my husband or myself falling asleep on the couch during Pitbull’s New Year’s Eve extravaganza at around 11:06 p.m.
At some point in my college years, I stopped striving with New Year’s Eve and decided to embrace it for what it truly is: just another night! Sure, it’s when we flip that magical calendar page into a new year filled with new goals and hopes and possibilities. It’s most exciting, don’t get me wrong. But I find if I set my hopes too high for the evening, I’m just left with disappointment…
Therefore, I can set the bar low and just treat it like just another night…
BUT it’s just another night that just so happens to be celebrated with bubbly drinks and indulgent bites. I can buy in to that much of it.
And boy oh boy, do I have an indulgent though not incriminating bite to share with y’all today!

I must admit, I feel like Santa has come early this year for me! In case you haven’t been up on Mister HHT’s life, he has temporarily moved to DC to work on President elect Trump’s general counsel for the Inaugural Committee. Fancy, huh?
Anyways, he's taking up a new though temporary residence in DC over the past week, so yesterday he flew in to glorious TYS here in Knoxville. Naturally, I’ve been a pretty happy camper to have my baby daddy around, if only for a few days.
With TWO YMCA’s within 10ish miles from my parents house here in Knoxville, I’ve been bouncing back and forth between the West Side and Downtown locations, getting my group exercise classes on! Golly, I just love a good class.
Most of my workouts this week have been centered around classes, though today I cranked out a delightful 12 Days of Christmas workout to share with y’all. Tis the Season, after all!
Over the next few days, between the presents and brunches and cookies galore, I urge you to take fifteen to twenty minutes for your health- a quick walk, jog, or even a little stretching. I know it’s a busy time of year, but you deserve a little time for you.
To add to your merriment today, I though I’d share with y’all what a typical day of my eating looks like, especially now that I’m pregnant. A little more dairy, a little more fruit and other carbs, and trying to make sure I’m keeping up my calories with a little more snacks.
So, here’s what I’ve been doing for workouts this week and fuel for one typical day. Despite my burgeoning belly and some of your disbelief, I’m feeling up to kickboxing, Zumba, and even an occasional jog! Check out my other fitness festivities, and be well!
And wherever you are celebrating this Christmas, I wish you peace and joy that cannot be bought or baked or bestowed. That peace, that fuzzy sweater for our soul, can only come from one source: Our Heavenly Savior. I hope and pray you are just overstuffed with His glorious joy this Christmas weekend.
