Praise the lawd, it’s FRIDAY peeps!
AND it’s almost the first day of October! That means, by law, it must start getting cooler. Right? If I can’t take it anymore, I may have to buy a pumpkin this weekend.
Stepping back into my childhood, I remember always loving sweets. I was usually inclined to things that weren’t chocolatey, such as strawberry TCBY, lemon cookies, and berry cobbler. I was a weird kindo, thinking chocolatey foods like plain M&Ms, chocolate milk, and milkshakes were too chocolatey and made me too thirsty.
I can remember one of my dear friend’s mothers introducing me to this baked square of goodness that in the south we call a Hello Dolly. To those of you who wonder if I’m making a Dolly Parton reference, well, I’m not. These are also known as Magic Bars or 7-Layer Bars.
As your healthy, happy Texan, it would come as no surprise that I LOVE salads. For a side dish or meal, any flavor can be saladitized…from Asian flavors with cilantro and cashews to Mexican flavors with salsa and avocado, topped with grilled steak or leftover barbeque, I can get pretty creative with my salads.
Now 98% of the time, I prefer to go the sweeter route for my salads, topping them strawberries and pecans, pears and walnuts, grapefruit and avocado, or whatever is in season. Even my meat-and-potatoes husband like grapes on his salad. We’re just fruity salad kinda people.
But there are those time, especially with a beautifully grilled beef filet or ribeye, that I want a heartier salad like a wedge or anything else that involves bacon and blue cheese.
This salad, in my humble and biased opinion, is the best salad to serve with a tender, juicy, marbled steak.

I cannot begin to tell you what a BLAST I’ve had these past few days with my unbelievable mother. She’s helped paint furniture, washed all of my windows, and even did some cooking that kept this healthy, happy Texan pleased (I’m sharing a fabulous salad she made with y’all tomorrow!!). She is such a model of generosity, selflessness, and southern grace; I couldn’t imagine a better mother to be raised by and friend to have now!
Enough of that, or I may get a little weepy….I won’t get to see her and the rest of my fam until Thanksgiving, which is a bummer but that’s life sometimes! I’m just grateful for the time I had with her this weekend.
So let’s talk Wal-Mart…it’s Wednesday after all…
It’s beginning to look a lot like….autumn!
Okay, not quite look like, but feel like autumn!
For someone who loathes heat with a PASSION, I’m greatly enjoying this dip in the temperatures we’re experiencing here in Corsicana. I know that the real autumn chill is a solid month away that I am anticipating with great enthusiasm, yet this little reprieve certainly gets me in the autumnal spirit.
Cue the pumpkin recipe…
As I’ve already probably annoyed y’all to death over, I’m SUPER pumped that fall is here. I just adore everything about fall- the spices, the produce, the clothing, the nail colors, the weather, the scents…I wait in eager anticipation for this season every year.
With September dwindling away and October right around the corner, I cannot help but look forward to Halloween and Thanksgiving and all the yumminess that comes with those holidays.
But then, I stop and think about why I anticipate these seasons, what’s it all for? Because I’m a fool for pumpkin? Because I love having a fire in my fireplace? How futile is that?
When it comes to what really matters- my relationship with my Savior- I don’t possess nearly the same level of enthusiasm as I do for autumn. That’s a problem, folks.
TGIS! Everyone always harps on about the beauty of Friday, but this has been one of those weeks that I've been jonesing for a day off. There are those weeks when I feel like I could pop out another day at school, and others where Monday already feels like a Friday. This week, unfortunately, was more of the latter.
That's life in the big city, huh?
Hopefully your week wasn't as hectic as mine; yet whether it was or wasn't, I'm not all about comparing who is worse off and trying to outdo you in my pitifulness. Pity parties aren't fun for anyone.
At least it is the weekend!! Time for a little extra sleep, a little Tennessee football (THIS IS THE YEAR, VOLS, TO BEAT THEM GATORS!), and some QT with one of my favorite people in the world- MY MOM! She's flown from Tennessee to hang out with me and help with a few projects around the house. She seriously is the best and just what the doctor ordered after a bananas in pajamas week.
This weekend, I hope you can make a little extra time for some activity- a walk, a bike ride, a trip to the gym. You deserve it, your body deserves it, and your health deserves it. I know we are all busy, but scheduling time for yourself to do something for your health will end up providing you with my time and energy to share with others in the future. Paradoxical but true.
