Happy Hump Day, everybody!
Who doesn't love a short week?
I hope your Memorial Day and weekend were smashing! Ours was pretty solid. McNugget successfully traversed to Shreveport for an overnight excursion to celebrate his Aunt JuJu graduating from PT school (WHOOP WHOOP JUJU!). With that adventure victoriously under our belt, we're taking things to the next level tomorrow: McNutt+airplane+mommy.
Yup. We're off to the motherland of biscuits and Dolly Parton and Rocky Top.
Knoxville, here we come!
With that said, my weekly Wal-Mart visit entailed making sure my baby daddy has all the staples to sustain him, though I know a few visits to Whataburger and Waffle House will occur in my absence.
Nonetheless, here's some goodies I stumbled upon while pursuing the wonderful world of Wal-Mart this week. Enjoy, y'all!
Good afternoon you dazzling ray of sunshine, you!
Hopefully, you’re reading this while overlooking pristine, shimmering waters of a lake or ocean or backyard baby poop. Or maybe you’re out camping in God’s great wilderness.
Me? I’m just hangin’ out at home with a 10 week old, unpacking from a weekend in Shreveport and repacking for a week in Knoxville, loving every single minute of this things called mom life.
However you are spending your Memorial Day today, we can all stand to be reminded of something that’s been on my heart these past few months: God is our strength.
If you’ve gone through the process of bringing a child into the world or have been wingman to your spouse as she endures the process, you know that being a new parent can be tough stuff.
Who knew something so tiny could produce such sounds (not to mention odors) that make you feel ever so defeated, helpless, and, more or less, like the worst parent in the entire world.
On top of all of that, there’s the accompanied exhaustion, sleeplessness, and frustration. Not to mention the near constant state of ickiness and stickiness due to the mass quantities of spit up, boogers, and other undesirable, unmentionable bodily fluids.
Being a parent can be tough stuff.
But let’s face it. Because of our mistake over that one apple years ago, our innate drive to stick our toes over the line, life is tough. We brought this whole sin thing upon ourselves. No getting around it.
Luckily, y’all, we don’t have to do this alone. We don’t have to muster the courage to face the trails and frustrations of daily life on our own.
We have a God that will not only grant us strength but glory-strength.
Let’s take this week on with His glory-strength, y’all.
As a busy mom of a two month old, meals can be tricky business, especially lunches.
You see, my little love nugget has a predictable morning nap and a predictable dinnertime nap (when daddy is home, of course), but that 8 hour stretch from lunchtime to evening is unknown territory.
Will he stay down for 27 minutes? 48 minutes? 112 minutes? Will he wake up early with gas pains? Because his pacifier fell out? There’s hardly any way of telling. Thus, my lunches sometimes turn into a snack around 1, knowing the actual lunch may not happen until 3 or even 4.
Likewise, dinner often does not occur until 8, sometimes 9 at our house.
I’ve never been much of a snacker, until motherhood.
Not knowing when my next meal will occur means I’ve had to develop an arsenal of snacks that are fast AND will nourish my body to help me keep up with the demands of a 2 month old.
Whether you’re a busy parent like me needing grab-and-go nutrition, interested in some new postworkout snacks (hey Holly!), or curious about what I like to snack on, I’ve got 10 balanced snacks that offer a lil protein, a lil fat, and a lil carbs for some quality Paleo fuel.
In addition to my busy Paleo mom snacks, I’m sharing my weekly workouts that those snacks are fueling. While I’m 2 months postpardum, I’m still easing into impact moves. I’m occasionally testing out short jogs and jumps, though bigger moves like box jumps and double unders are still disasterous for my pelbic floor…sigh, one day, I may double under again…one day…
In the meantime, I’m grateful for what my body is able to do every day. God is good, y’all.
Friends, I have a secret to share with y’all, one that I’m a little hesitant to do, yet we’re in a circle of trust, right? Well, here goes…
Tomorrow is my birthday.
There, I said it.
Birthdays are a tricky business for me. I don’t mind the fact that I’m a year older, that’s not the problem here. It’s all the attention: the full-volume singing, the awkward stare down as I’m forced to open gifts in front of others, the forced sense of importance and high expectations forced upon the day. It's like New Year's Eve, but I am the reason for the hoopla...yikes.
Over the past few years, I realize I do want my birthday acknowledged. Ignoring it entirely would be a tad hurtful. But I hate having a big to-do made on my behalf.
When I got to thinking about making myself some type of paleo-friendly birthday treat, like a gluten-free carrot cake or flourless chocolate tart, I realized I would be the one who would have to 86% of it…not really helpful when you’re working on toning up the mom bod.
That’s when it struck me- what if I could make a cake-flavored treat that was bite-sized, nutrient-loaded, and didn’t have to be consumed in one sitting?
Yup, that's how today's recipe came about...I whipped up my own birthday cake protein bites.
All the magical excitement and sprinkles and buttery vanilla goodness of birthday cake sans the awkward singing and staring that often accompany the confection.
Birthday cake protein bites…happy birthday to me, indeed.

Y’all know every now and then, I’ve gotta spice things up and share with y’all some grocery finds from places other than Wal-Mart.
Well….1) I know y’all don’t all grocery shop at Wal-Mart (lookin' at you, mom) and 2) I want to emphasize to y’all that fun, paleo-friendly groceries can be found at nearly any grocery store these days if you look for them.
So, I’m sharing with y’all today some of the magical, mystical foodies I found at the Narnia of grocery stores: Aldi.
If you have an Aldi in your area and have never set foot in it, hopefully some of these affordable paleo foods can persuade you to check it out.
So grab a snackeroo and let’s get goin, friends, cause I have LOTS to share!
Good morning, y’all! How’s it hangin?
For me, life is grand. My sweetness just turned 2 months old, and, as if it were some magical 2 month old rule, he started sleeping through the night…I’m talkin’ he goes to bed like me at 10 p.m. and sleeps 8 ½ hours like me.
What a gift!
Now, just because my little nugget is sleeping more at night does not mean I have all the more freedom and time and ease throughout the day.
His naps are still rather unpredictable at best, so throughout the day it’s a total crapshoot as to how much free time mommy gets.
As a result, I still don’t have the time like I did pre-McNugget to dilly dally in the kitchen. When it’s time to meal prep and cook, I need things that are pretty simple and quick.
That’s why I’m SOOOOO excited to share this new recipe with y’all today.

You all know peanut butter.
You’ve probably met hazelnut butter (cough cough, Nutella).
You’re familiar with almond butter.
You may have even acquainted yourself with cashew and sunflower seed butter.
But today, I introduce you to the latest and greatest addition to the nut butter world (yes, coconut can technically be qualified as a nut…and a seed…and a fruit…it’s multitalented, y’all): COCONUT BUTTER!
Hold onto your knickers, gang. This is going to ROCK YOUR WORLD!
